I think this is the month of Dutch specialties  Yes, I will be posting an other one, which I baked but I haven't posted.  Already this post is 1 day late, This is a very delicious cake I baked,  so say our customers (@home!!), and they recommend my cake to our friends as well, My kids have been praising me so much, they just loved the coconut in it.., If your coconut maniac like me you will just love this, I myself couldn't resist eating it.

As always I have changed the recipe to Baking it Eggless and also made it vegan.  I was a bit scared how it turns out.., to my astonishment, it was a total success.
Before going on to my cake recipe, I have to tell you that this might be not your choice of cake, as I have used a different flour, you might not want to try it out, If you don't like you can just stick on with All purpose flour / Maida flour / plain flour.  The cake was a bit chewy but so so soft couldn't believe it.
This is how I made it..
EGGLESS AND VEGAN DANISH CREAM CAKE - DROMMEKAGE FRA BROVST
Recipe source : Diana's Desserts

INGREDIENTS:

125 gms Self Raising flour
100 gms Barley Flour*
1 tsp Baking Powder
1 tsp Baking Soda
1/4 cup oil / coconut oil / soya spread
200 ml Coconut milk ( I used ready made )
1/4 soya custard milk ( or use just 1/4 cup warm water)
1 tbsp Apple cider Vinegar
1 tsp Vanilla essence

FOR THE TOPPING 
100 grms dessicated coconut
225 grms of brown sugar
1/4 cup powdered oats
1 tbsp coconut oil

METHOD:
Preheat Gas Mark 4 / 180 C**
Grease a baking 8 - 9'' square or round tin with parchment paper and keep it ready.
Take all the dry Ingredients in a large bowl both the flours, baking powder and baking soda, sieve them all well together and keep aside.
.In an other bowl take coconut milk, vanilla essence, oil, Apple cider and coconut sugar, beat them all until well combined.
Immediately start adding the dry Ingredients in little quantities, until all of them is incorporated completely.
Pour this batter into the tin and bake for 20 - 25 minutes ***, until well baked or a tooth pick inserted comes out clean.
Meanwhile when it is baking make the topping and keep it ready.
Once the cake is ready remove it from the oven, leave the oven to 200 degree / Gas mark 5.
Spread the topping on top of the baked cake, put it back into the oven and bake it for an other 10 minutes, Remove it from the oven cut it into squares and serve it.

This total is not exactly a Danish cream cake, I have changed to my liking as this was a  challenge, we have made it Eggless according to the challenge.  To make it more healthier I have used Barley flour.  If you want the real Danish cream cake, check the link above and make this wonderful cake.  You will definitely love it.

VARIATION AND NOTES:
*I have used Barley flour for healthy baking you can just substitute with plain flour which might have a superb  texture and won't
** I baked this in Gas mark 3, as always I say my oven gets too hot and burns loads of my baking!!
*** As I baked it in lower Gas mark, I had to bake it for around 30-35 minutes.

VERDICT:
The cake was bit chewy, but very delicious, If you love coconut, this is the cake for you, My kids really loved it so much, I had never seen my children eating dessert immediately after food, they ate promptly and recommended to my friends too...
something new and something you should know...
I have used coconut palm sugar, which is not too sweet, it  was quite expensive, I started searching about this product and I have come to know much about it, I will do a post about this soon.., After that you can decide do you want to use it or not, I thought I could recommend it  to people with diabetes, even though it has low GI Index, it is high in fructose, as Googling I found out that sugar is sugar, and use it less is good.  This has a Caramalized taste, It is not too sweet, so your cake will not be too sweet, you can substitute ordinary sugar, brown sugar, caster sugar etc.., It is golden brown in colour and is unprocessed.

Cauldron cake? In the first series of Harry Potter, these cauldron cakes were in the Hogwarts express! These cakes consist of devil's food cake cupcakes dipped into a rich chocolate glaze and filled to the brim with marshmallow filling.
A year has gone by cannot believe it at all, so I say every year, wondering how did it go? where did it go? what did I do ?.  Every Important day, Festivals etc.., I never come out to blog about it, nor write any post which should be something interesting to people who might come here to read about, that's just a thought though.  Every year I keep thinking I will write something that might be Interesting, catchy, cheeky, etc.., but dear God I am happy I am not so talented.
I decided eventually I will write and recollect all my 2012 posts the best ones or the worst ones.  Oh! no, I really don't have that much patience, reminiscing about the things of past year. Personally, I haven't done much,   Well, coming to the year 2012 has been had its own ups and downs.  I have been very happy with my kid's progress, only me I have been having a lot of ups and downs with my health. well, let me not get into my everyday moaning, This will be my last post of the year Hoping that this year will be really a Happy one, for each and everyone of you, bringing you all the joy and things which you wish for, Hope the world sees better things in future, Lots of things which has saddened lives of lot of people happened hoping that they never get repeated again.

Coming to this recipe, this was our last post of this year's Baking eggless group challenge, Archana of  The Mad Scientist's Kitchen suggested that we make these Cauldron Cakes for this month's challenge.
I was enchanted by the beauty of these cakes. They looked awesome, the more interesting thing for me in that was the Marshmallow fluffs.  I was so interested in making them.  I just googled and googled and then I remembered that I had a photographic recipe of the marshmallow making in my phone!, well went and checked into that as well, and at last, I made my own Marshmallow fluff.  Honestly, I really don't know how good it is, neither it is anywhere near a fluff but anyway I am going to post it. Well, it was very sweet that much I know as they sticky, gooey and I kept licking and washing my hand few times.  My daughter said it was sweet, and she doesn't mind finishing off.  well, I have to update you about it tomorrow.  well, now you know that I made these cakes just today morning for New Year.  well, I got so tired of all the things, and I hadn't checked I had no more chocolates left and I couldn't make the handles for the cauldron. So here are my cakes without the handles :)), and I also got a bit lazy to do the exact way to fill up the fluff. Oh! no I was wrong I did it perfectly the way it had to be filled up, read in between the lines of the recipe.
EGGLESS CAULDRON CAKE
DEVIL'S FOOD CUPCAKE
Makes 6 Cakes

Baking time: 20 minutes

INGREDIENTS:

1 cup Cake Flour and 1/4 cup All purpose flour
1/2  Cup Sugar**
1/2 Cup Cocoa powder
pinch of salt
1/2  cup oil
1/4 cup water + 1 tbsp Instant coffee powder***
1/2 cup Milk
3/4th tsp Baking powder
1/4 tsp Baking soda
2 tbsp Buttermilk
FOR THE GLAZE:
Bittersweet chocolate 250 gms
FILLING:
Eggless Marshmallow fluff Homemade
1/2 cup Vegetable shortening
1/2 cup confectioner's sugar
2 tsp vanilla extract

METHOD:
FOR THE DEVIL'S FOOD CUPCAKE
Preheat the oven to Gas Mark 4 / 180 degree. Take all the dry Ingredients and sift them well enough at least thrice., and In another bowl take all the liquid Ingredients together.  Make a well in the centre pour in the liquid Ingredients until everything is thoroughly incorporated, bake for 10 minutes on Gas Mark 4 then reduce the temperature to Gas Mark 3 and bake for another 10 minutes.

Remove it from the oven and cool it on a wire rack.

TO MAKE YOUR GLAZE

Melt chocolate in a double boiler, stir until smooth. remove from heat, with the help of piping bag, Pipe out handles for the cauldron draw another line on top of them once the first one gets dried out. so that the handles are stronger.

TO MAKE THE FILLING:
Beat together all of the Ingredients under the filling until light and fluffy.

TO ASSEMBLE CAULDRON CUPCAKES
Dip in the cupcakes in the chocolate glaze and place them upside down stick choco chips to make a stand for them until they dry up.
Core a whole in the centre of the cupcake and fill it with the Marshmallow Filling.
Then pipe a line around the filling and place the handles on top and serve it...

NOTES:  I changed a few things like I increased the oil, otherwise the muffin is very dry in texture.  ** I have marked star against sugar to tell you the cake was not sweet enough increase with another 1/4 cup for normal sweetness or increase by another 1/2 cup for a very delicious cake.
To my surprise the muffin rose so wonderfully high I was surprised, that is why I took the photo and posted it.

well, my cupcake misses its handles...

Hi everybody, Oranges and me have a great connection I think you might have noticed I have loads of Orange recipes in my blog, Oranges as we all know is good source of vitamin C, and I think this time of the year we definitely need it, Consuming Vitamin C rich food keep the cold away.., This also helps in the absorbtion of Iron when you are eating Iron rich food as well,  keeps the Haemoglobin content well.
Coming back to this cake, This is suppose to be a  Greek Cake which I got from a cakes and bakes Magazine, People in Greek bake this often and they love and enjoy it.  I searched few websites for this cake but ended up making from this magazine, as I liked the Idea of it.  Hope you like the Idea and enjoy it too.. as my family and friends did...
My Children loved it, they said it was sweet and moist, I made few changes adapting it to my way of baking, I have used silken Tofu in my bakes, but not to this quantity,  I tried and was quite satisfied, This particular cake was more interesting to me as I had  fruit in it and later on I decided to use cocoa powder in it so I could send it to Kalyani's Monthy mingle Chocolate and fruits, which I am posting it a bit late.  Check my notes for the changes I have made in this cake.
This cake stays moist for at least 5 days, no need to refrigerate it either (well I am talking about this climate)

KEIK PORTOKALI - ORANGE SEMOLINA CAKE - EGGLESS
Minimally adapted from Cake & Bake Magazine

INGREDIENTS: 
FOR THE CAKE
2 Medium Organic Oranges well Scrubbed
1/2 cup Olive oil
1and 1/2 Cup soft brown sugar
200 grms fine Semolina
1 Cup + 3 tbsp Mori Nu Silken Tofu ( around 300 gms )
50 grms Almond meal ( Powder )
1/4 tsp salt
1 tsp Baking Soda
1/2 tsp Baking powder
2 tbsp milk

FOR THE GLAZE:
1/2 tbsp Butter / vegan Butter
1/2 cup Icing sugar (confectioner's sugar)
1 tbsp of Milk / soy milk
1 tsp of Orange Blossom water
1 tsp of Orange juice

METHOD:
In a very hot water add two oranges in intervals of 5 minutes for 4 to 5 times keep changing the water that is after every 5 minutes throw away the water, use fresh hot water again and do the same way at least 4 times, this will remove the sourness of the orange skin. (even though not completely )
In a thick bowl boil the whole oranges in plenty of water until softened, almost about 1 hour in a low flame, with a closed lid which had a little hole in it. keep checking that they are well covered and keep adding hot water as needed.
Once it is cooked take out the Oranges, once they are cool, Quarter the oranges to ensure that there are no pips and seeds,  Puree the oranges skin and all in a blender or food processor until you have a smooth orange puree.
Grease a Bundt pan and coat it with flour and set aside.
Preheat the oven to Gas Mark 4 / 180 degree**.
Take all the dry Ingredients and sift them well together except cocoa powder and keep it ready.
Meanwhile Blend Tofu**  in a blender or Mixer until smooth with 2 tbsp of milk (see notes)
In a large bowl, pour this Orange puree into it, to this add oil, sugar and well blended Tofu puree also into it.
blend them all well together.

To this Blended Liquid mixture add the dry Ingredients until well incorporated.
Divide this mixture equally into two bowls to one of this bowl blend cocoa powder to this set aside.
Take your Bundt pan pour one spoonful of the white (not exactly) batter next the cocoa next to it then the white batter and next the cocoa batter on the next step alternate each batter on top of it as the batter is not very stiff but bit liquidy it spreads.
Once all the batter is used up.
Place it on the middle rack and bake it in the oven for 40-45 minutes**.
Once done remove it from the oven and place it on a cooling rack, after 10 minutes, remove it from the tin and allow it to cool.
Then I made the Glazing and poured it on to the top of the cake and leave it cool down.
Slice and enjoy the cake...

NOTES:
Blend Tofu in a blender or a mixer without any lumps, then add 2 tbsp of milk blend again so it is smooth and silky.
I always bake my cakes and other baked products in Gas Mark 3 as my oven has very high temperature, even though I have given the universal cake baking temperature.
You bake with your oven temperature and also check the timings as well.

ORIGINAL RECIPE IF YOU WANT TO TRY OUT:
Original Recipe calls for 5 eggs, 185 ml Olive oil, 140 gms caster sugar, 250 grms fine semolina, 80 grms almonds chopped and few chopped almonds for decoration.
This recipe also uses syrup to pour on to the cake after it is baked. for this syrup 125 grms caster sugar, juice of 1/4 lemon and 1 tsp orange blossom water

Hi everybody, Hope you are all doing well, Day by Day weather is getting colder and colder, I thought we might be having snow as the temperature are dipping down and down, A bit scary for me, and I hate the heaters, I keep bringing it down and my family hate me for that, I hate the heater as I end up having headaches.., even though sometimes I like winter I don't like the heaters.  One more thing I get scared of winter is the Bug which goes around when everybody gets sick and goes around in circles :)), almost every year I get stuck with flu and suffer too much, so this time I decided I will get a Flu Jab and escape from this problem, funnily after taking the flu jab within 4 days I was down with Laryngitis  and viral fever and that too I got complete down the day my mom went back to India!!.
Anyways Flu which bugged me for a long time kept me away from blogging and I missed to post few of my recipes for the Events which I was part of it, I have to thank all of them for understanding my problem and allowed me to post when I recover and here I am ready to post one by one and hope you will enjoy as did my friends and family.
Gayatri of Gayatri's cook spot  had asked us to make a Butter Cake for the Eggless Baking Challenge and I thought this was a chance to post a cake which I used to do before when I used  to use  lot of butter,  I have  cut down a lot these days on butter, but as this cake is a butter cake you can't go back on it  right ?, This time I changed a bit from my usual Eggless butter cake recipe, which also turned out really well, My other cake I will post someday soon the usual recipe I always make.  Hope you like this , Bake it, eat it, enjoy it, and write to me about it.  Here is how the recipe goes...

I have decided to post my event recipes from today continuously for 4 days. I want to do this so I can post my other recipes soon, as I have been baking quite a lot, and want to post them all stay tuned for these bakes...

EGGLESS BUTTER CAKE

INGREDIENTS:
1 and 1/2 cup (220 gms) All Purpose Flour
1/2 (100gms) Butter
2 tsp Baking powder
1  tsp Baking soda
1/4 tsp Cinnamon powder
2/3 rd cup granulated sugar
1/2 (150 ml) cup Condensed milk
1/4 cup milk
1/2 Cup warm water*
1 tbsp Vinegar
1 tbsp Vanilla extract
20 gms Corn Starch

Topping:
1/4 + 1tbsp butter
2tbsp Brown sugar
1/2 tsp Cinnamon powder

METHOD:
Sift all the dry Ingredients ( All purpose flour, Baking powder, Baking soda and corn starch ) together and keep aside. (except for sugar)
Preheat oven to Gas Mark 4 / 170 degree
Line a Baking tin 9''
Take a Large bowl add melted butter and sugar cream them well together, In a blender ( I used my Indian mixie ) Blend condensed milk with milk, add it to the creamed mixture, mix them all well enough.
To this add vinegar, vanilla extract and warm water and combine them all.
Now add the dried Ingredients to the combined liquid ingredients little at a time, and make sure there are no lumps in the cake batter.
Pour this batter into the prepared tin, Bake it for 35 minutes depending upon your oven, check if it is baked perfectly by inserting a skewer or tooth pick, when it comes out clean cake is done.
Remove it from the oven and cool it on a wiring rack for 10 minutes then release it from the tin. Allow it to completely cool down and enjoy...
Gayatri had asked us to do cinnamon topping. which I did not do, I have given the topping ingredients you need to melt, mix well and top it on the cake when it is still warm.
My kids didn't want that topping so I added cinnamon powder to the cake batter itself.

We at Baking partners planned to bake Rene de Saba avec Glacage au Chocolat for this month's baking challenge as August 15th 2012 would have been Julia Child's 100th birthday


I wrote all those quotes, thinking of Julia, would she have been happy with the cake I have baked may be yes, may be no..., but may be she would have appreciated for the challenge I took to make it eggless, as she says try new things and have fun.., Yes I did have fun and the cake was delicious, may be less sweet but with low fat content, I could say a healthy bake.  

Queen of Sheba and King Soloman were two characters glued to my mind from my childhood, I always loved reading story books, comics and especially books like Akbar and Birbal, Chanakya, Tenali,  were mesmerizing characters, writing about these books are bringing back lot of childhood memories and loads of books I miss and wouldn't mind reading them all over again.
So, the next question  is ? Queen of sheba and Julia Child, what is the connection between these two. Julia child is an other character I was so loved, when I think back, I never knew who Julia Child was, blogging has brought me to a new world to know about not just recipes but most of the time particularly with International cuisine, why was this recipe named so, what's is the uniqueness of this recipe, who was behind it ?, why did they call it so ?, which place and why has its origin from here etc.., etc.., right ? you too agree with me right ?.

I came to know about why Julia child especially called this cake Rene de saba ( Queen of sheba ), from our beloved Google that when she made this cake she thought this cake is delicious it is fit for a queen and named it after her.
Queen Sheba like King Soloman was famous for her wisdom and also for her beauty and wealth, she is spoken about in Ethiopian history, the Bible and the Qua'ran.
Coming back to this recipe, this recipe is in her book ''Mastering The Art of french cooking'' by Julia Child,  I came to know that this is the last recipe in her book. As I had already made this cake for the Book club by Simran.  I contacted Swathi of Zesty South Indian Kitchen 
who is the brain child for this Baking Partner group and told her about it, and said may be I will try a Eggless version of this cake, and she was delighted and said go ahead and bake it.
I actually should have remembered something before I baked this cake Eggless.  Do you know why ? actually long back I had baked something like this for a brownie. well, was it not a good introduction  that the cake I baked it for the first time was a disaster. The cake was delicious but just collapsed in the middle!! :)), No problem, I had some Ice cream asked my kids to enjoy it, actually they liked it as it tasted like a brownie, anyway that was done and dusted, I went to work, but kept thinking about it, I was really upset that I couldn't achieve it.
Came back home in the night, asked my daughter to measure the ingredients again and set about baking the cake, that was then I was telling her we will reduce the butter content and choco content in it and see what happens, the best thing was she was the one who helped me with the baking ingredients for the first time, just because of  that I think she remembered the measurements and told me mum, I think the butter and chocolate are of almost equal quantities, what do you want me to do ?, I was quite surprised at her memory as she was not too keen on helping me with the cake baking, so we both decided that we will reduce chocolate and butter to the same quantity  and see what happens.
so, this is how I made it...,

EGGLESS RENE DE SABA AVEC GLACAGE AU CHOCOLAT
For an 8'' pan
Baking time: 25 - 30 minutes


Ingredients:
65 grms ( around 2/3 cup) Plain flour*
74 grms ( around 3/4 cup) Ground Almonds
35 gms butter
35 grms Semi sweet chocolate**
2 tbsp of Coffee powder
1/4 cup Granulated sugar
3 tbsp Condensed milk
1/4 cup Yogurt
1 tsp Baking Powder
3/4th tsp Baking Soda
1 tbsp Corn starch
2 tbsp hot water

FOR CHOCOLATE ICING:
56.7 Grams / 2 Ounces semi sweet baking chocolate**
2 tbsp coffee
5 to 6 tbsp unsalted butter

** I have used Dark chocolate

*She uses Cake flour, If substituting for cake flour: Take 1 tbsp of Corn starch in the cup and then fill the rest of the cup with plain flour but I changed it as I have mentioned above.

METHOD:
Preheat the oven to Gas Mark 3.
In a double boiler method, In a bowl  boil water and bring it to simmering then place a small sauce pan over the bowl melt chocolate, In 2tbsp hot water dissolve coffee powder and then add it to the melting chocolate.allow it to melt switch off the stove.
Line the cake tin with Baking parchment, Measure Almond meal, All Purpose Flour, Baking powder, Baking soda and corn starch and combine well together, and sieve them well together and keep aside.
In a food processor or an Indian Mixie blend together condensed milk, yogurt, melted chocolate with melted butter to a nice and creamy consistency.
In a large bowl take this creamy blend add sugar mix well then add Baking powder and Baking soda, combine them well together, within a few seconds you will start noticing bubbles forming up.
To this blend immediately fold in the dry ingredients delicately with the help of a rubber spatula, until everything is well incorporated.
Turn the batter into the cake tin and bake it in the middle rack of the oven for 25 to 30 minutes in the preheated oven.  Cake starts to puffs up around the circumference,  plunge a tester / skewer into that area of the cake when it comes out clean then you would know it is done.
The center might be a bit shaky if a toothpick inserted comes out a bit oily and comes out with a few moist crumbs.
Take out the cake when it is done, Allow the cake to cool it on a wiring rack, after 5 minutes run the knife through the edge of the pan and turn it on to the cooling rack.
Allow it to cool for at least for at least an hour, if you plan to do Icing, you need to cool it completely.

FOR THE ICING:
Place chocolate and coffee in a small sauce pan, and set it in a larger pan with almost simmering water away from heat allow it to melt with butter beat it together until smooth and shiny.  Immediately spread it over the cake.

I used my pastry brush to make strokes on it and decorated it with flaked almonds in the middle and I had some home grown strawberries which I placed it on top just to make it look nice.  Hope you like it.

Hi everybody, It's wonderful to be back here again, after a really wonderful week, Mum is here.., Just like all the sweets in the world, incomparable and delicious to and still I am unable to believe and still it is not sinking in my mind, I am already worried that she is going to go back in 3 months.., 🙁 . I love to enjoy every moment and relish it with her, After all these years at last she agreed to come, I am so happy because kids have changed their routine, I see that they eat 3 times in a day Yay!, by the time I come back they would had their shower and breakfast and lunch, isn't it great before I had to call them or sometimes when I came back from work around 2 O' clock they used to have their breakfast, when I scream they always said that they weren't hungry!, everything is changed now, as mum has taken the reins.., not that I am cooking not completely spoilt   by her, she wants to see how I bake, I did a few bakes as well.
One of them was these Lamingtons, for the Eggless group of Gayatri's, she had asked us to bake Lamingtons and adapted the recipe from David Labovitz, who doesn't like his blog, I love his blog too.., as everybody, I have tried many of his recipes and enjoyed immensely.
Lamingtons are Speciality sponge cakes from Australia they are originally dipped in chocolate icing and rolled out in dessicated coconut.  I made it Eggless and made it vegan too.., I was a bit scared how my kids would like it, they were saying that it was delicious and tasted like bounty chocolate.
May be not everybody would like whole meal flour in baking, You  can  substitute plain flour / APF instead of whole meal plain flour, whole meal flour makes any baking a bit chewy but definitely a healthy one...

EGGLESS AND VEGAN WHOLE MEAL LAMINGTONS
Recipe Adapted from David Lebovitz

INGREDIENTS:
FOR THE CAKE:
150 gms Whole meal Plain flour**
75 gms Plain Flour
175 gms Sugar
1 tsp vanilla essence
3/4 th cup silken Tofu
1/2 cup soya milk
1/4 cup oil
2tsp Baking powder
1 tsp Baking soda

FOR THE CHOCOLATE ICING:
170 gms ( 6 ounces) bittersweet or semi sweet chocolate chopped
( I used bittersweet 70% cocoa)
40 grms unsalted butter ( I used 1 tbsp Oil)
3/4th cup (180ml) milk - whole or low fat, ( I used Soya milk )
2 cups (220 gms) powdered sugar
2 tbsp Cocoa powder, natural or dutch process ( sift if lumpy )
2 tbsp boiling water
3 cup ( 200 gms ) unsweetened shredded coconut (Dessicated coconut)

** I have also made with only whole meal plain flour the cake turns out good as well

METHOD :
FOR MAKING THE CAKE
Preheat the oven to 170 degrees/ Gas Mark 3  just 10 minutes before
Sift the flours together with baking soda, baking powder together.
Then blend milk and tofu in a food processor or a mixie In the end add the oil and vanilla essence so they are well combined.
In a large bowl take the dry ingredients then add sugar and pour well blended Tofu mixture.
combine them all well together pour it  in a 9'' (23cm)  and bake it for just 30 to 35 minutes depending upon the temperature of your oven.
Insert a toothpick or a skewer to test if it is well done, if it comes out clean then it is well done.
Take it out of the oven and leave it on a cooling rack for 5 minutes then invert it on to the cooling rack and let it completely cool down.
Then cut the cake into 12 pieces , cut them in halves.

FOR MAKING THE CHOCOLATE ICING
Make a double boiler, on a simmering hot water place a bowl, the bowl should not touch the water, take chopped chocolate pieces, oil and milk until they are completely melted and and smooth.
Take it out add the powdered sugar, you can sift sugar and cocoa powder into the bowl and whisk well until well combined.
Your chocolate Icing is ready to be in use now...

ASSEMBLING THE LAMINGTONS
Spread the dessicated coconut in a large plate
Take each cut piece, apply the chocolate icing using a fork then sandwich them down, you can add hot water a tbsp or two into the icing before dipping them if they have hardened up. But mine didn't so I did not use any water at all. Dip each piece into the chocolate Icing with the help of your finger, fork or anything you are comfortable with.
Handle them slowly as they are not made with Eggs or plain flour, It might not be too firm, hold these dipped cakes to a side wiping the dripping chocolate icing.
Roll them in the coconut covered completely and allow it to stand for some time to firm up a bit.
Enjoy

NOTES:
Cut the pieces into perfect squares or however you want, as I have used whole meal flour, the cake would be a bit difficult to handle and tend to crumble not totally though.
You can even trim the ends if you are serving for a party or something to get nice perfect lovely pieces
I just didn't bother but just sliced them.
I was a bit scared to handle the cake by cutting it in one go so I halved the cake first then sliced them in rectangles and then sliced them in half each long rectangle.
My Icing was not firming up quickly may be because of oil so it was fine for me.
I think the chocolate icing got soaked up to the cake well enough.

I love baking so much, I can't resist baking even for a day, but I need to remember myself is it alright to feed my family with loads of Baking powder, Baking soda, Yeast, Butter, oil etc.., When I was in India, even though I come from a family of bakers, I never used to buy Bakery stuff, it was always like a treat to my kids.
I always tried to cook everything from scratch at home. Never used to visit hotels, restaurants often, Baking became an obsession only after coming to the UK.
Baking has brought me into lot of things I am learning - Come to think of it I should  say people living in those climates need those particular kinds of diet I suppose, which is good for that kind of living environment,  every country has its own Original recipes suitable to the climate probably, Ancestors might have thought and cooked food the way it was provided by the nature to them may be.
Only now we have changed too fast food and takeaways always, for a fast life, sometimes a lazy life, that we don't want to do anything from scratch and try to take shortcuts....
These food blogs and cookery shows have changed a lot of things in our outlook of healthy eating I think I love Jamie Oliver's show, he is really trying hard to change the food habits of our future generation.
Maybe in India we don't get to see people doing lot of taking away as for lots of reasons, basically living in a joint family where you have people helping in everybody's day to day living, having household help (maids), too many channels showcasing about good food and healthy eating, lot of cookery shows, trying to get best out of everything even from waste ( I mean to say for example like using peels of vegetables etc..,!), sometimes we get people come and cook for us !, that's even better  right ? I think its totally the social set up I suppose.
If we ate 2 to 3 days continuously in hotels or restaurants my parents would get upset and complain that we are consuming lot of soda, which is not good for health, they even said, people in hotels and takeaways add BP,BS and loads of oil to make it much tastier and for longer shelf life which is no good!, I was brought up with these concepts every day, Now I get confused and it concerns me, when I bake.
Once, long time before my Hubby came home and said that they have banned using of Baking soda in cooking in his office canteen as it is bad for health, and causing health concerns for its employees!. Anyway as always It is said in the end minimal use of anything and everything in consumption is not a big cause of concern I suppose.
Well, whatever I have said here is merely my thoughts, I am not offending anybody's food habits or cooking habits in particular.., so please don't take it in any wrong sense.
Sorry I don't know why I went away from the topic of baking these goodies!, I started with my cupcakes and drifted somewhere else!, well, coming back to this recipe, One day when I was googling about something I got hooked to this recipe.., well, you definitely would know why if you are an Indian by origin.., It's the spices of course.
I have come to know by googling and from books that a lot of Persian cuisine use spices just like us, or should I say we started using them, as they came to India too..., anyway I am not deep into this subject again, as I am not an authority on these lines.. :).
I fell for this recipe completely.., Azita says this recipe takes its name from the city of Yazd, the capital city of Yazd province in central Iran.
This cupcake is so delicious in flavour you will fall for it, My daughter having one bite said it tastes something she knows, she kept telling me it's that sweet you make mum! the round golden brown balls....,  I kept thinking too and suddenly it flashed - Yup its tastes like Gulab Jamoons! only baked version!
She has adapted this recipe from a cookbook by M.R.Ghanoonparvar's ''Colucheh Yazdi'' recipe in his first cookbook Persian Cuisine: Traditional, Regional and Modern foods, check out this link if you are interested.
I found another website showcasing the same recipe but she has adapted from another book by Najmieh Batmanglij from his cookbook New Food of Life: Ancient Persian and Modern Iranian Cooking and Ceremonies.
Once I got the recipe, I have to tweak it to my liking so I had to make it eggless, but I halved the recipe, that's all I did.. changed it into an Eggless cupcake.., I have already made it many a time and taken it with me to friends and family who fell for this lovely cake..
EGGLESS YAZDI CUPCAKES


INGREDIENTS:
1 Cup All Purpose flour/Maida
1/4 Cup Rice Flour
3/4th Cup Sugar
1/2 Cup Plain Yogurt
1/4 Cup + 2 tbsp of Unsalted melted butter
1 tsp Baking powder
1 tsp Baking soda
1/4 tsp Cardamom powder
1 tbsp Rosewater
1/4 tsp Vanilla essence
2 tbsp finely chopped Pistachios
2 Eggs (optional - I just omitted)

METHOD:
Preheat heat the oven to 180 degrees/Gas Mark 4/350 d Fahrenheit.
Mix all the dry ingredients together, plain flour, Rice flour, Baking powder, Baking soda, powdered Cardamom and sieve them together at least twice
Then in a large bowl take the wet Ingredients together....
First of all take Sugar and a bit warm melted butter to this add vanilla essence, Rosewater and beat it together the sugar dissolves (do not worry if not completely) for 2 minutes then add the yogurt mix well together with one tbsp of chopped pistachios and immediately add  your sieved dry ingredients to it in batches.
Sometimes the butter might start to harden up maybe because of the cold temperature here, so that's why I said to add yogurt to the end and then the sieved flour immediately in two or three batches as the quantity is very small it won't take too many batches, don't try mix too much, mix in circles and blend it in with no lumps.
Line cupcake trays and cupcake liners and spoon the mixture into them, fill them 3/4th and bake in the oven for 20-25 minutes or when a toothpick inserted comes out clean
These cupcakes need not be frosted as they are lovely just as they are...

VARIATION:
You can add 2 Eggs with the above-said recipe to make this cupcake with eggs.

The cake turned out perfectly with lots of flavours in it and as you can see it was soft and moist, it would crumble quickly if left for long (maybe 2 days).

Do you like Coconut then this is for you, the coconut just gives you such lovely taste, you wouldn't go without an other piece, This cake is basically made with Eggs, I just turned it into an Eggless version, I come from south of India, from Karnataka State, Like keralites, People in Karnataka also tend to use lot of coconut in their cooking. Born and brought up,  like any other Kannadiga, I use coconut in my cooking a lot, which is minimised now a days  :(.

Well. It's already wednesday, that means an other Blog Hop already, I was assigned by Radhika of Tickling Palates with Shireen of Ruchik Randhap, and guess what she is from my state - but comes from Mangalore, I have been to mangalore many a times, Mangaloreans use coconut a lot in their cooking and cashews,  I still remember when I went there the first time I was in a school trip from seva dal  stayed near Mangala Stadium, where we had all our programmes and activities,  Mmm.., that's what I remember and bought Cashewnuts!. Now of course I have lot of friends and I love their cooking style too., so going through her blog was lovely, remembering my friends and the Mangalorean food!, she has such a lovely space, she talks about the place she comes from and writes a little story in every one of her delightful reicpes.., In her blog she has photos of some of the veggies and fruits which makes me think of home, and its been quite a long time I tasted them.   I tried two of her dishes, this is one of them, the other one I will post when I post one of own recipes.
Bascially, when I go to a blog I look for original recipes, so I had to try out the other recipe first and then this one!, she has tried out this recipe from NZ's Favourite Recipe. Check out her space for this recipe, it's a real beauty, the clicks are  so beautiful, unlike mine, you feel like picking it up.
I tweeked the recipe little bit as I was making this eggless and the recipe calls for 3 Eggs, so I had to change it a little bit to replace three eggs

EGGLESS ONE BOWL COCONUT CAKE


INGREDIENTS:
1 cup of Plain flour
1/2 cup Fine Corn meal
1/2 cup Dessicated Coconut
3/4 th cup Granulated sugar
1/4 cup Condensed milk
1/4 cup Milk
1/4 cup (+2tbsp) curds
1/4 cup Tutti-fruti
1 1/2 tsp Baking powder
1 tsp Baking soda
1/4 cup Coconut Oil
1 tsp Cardamom  flavour
1/4 tsp salt

METHOD:

Preheat the oven 10 minutes before at 180 degrees/Gas Mark 5
Line an 9'' round cake tin
In a large bowl take both the flours, baking powder, baking soda and salt mix well combined, then sift together twice and keep aside
In an other bowl mix all the wet Ingredients, condensed milk, milk, curds, cardamom flavour and sugar, mix well combined until the sugar is well dissolved then add the dessicated coconut and Tutti-fruti, to this add the sieved dry Ingredients until well incorporated into it in a nice circular motion, don't mix in too much, the air bubbles created will fall through other wise.

I added extra 2 tbsp of buttermilk to make it little more wet and to a dropping consistency, just have an extra 1/4 cup curds, use it according to your flour.

I took a 1/2 tbsp of cocoa powder and mixed with 2 tbsp of hot water then poured it on top of the cake and swirled it around the cake

Fold this wet batter into the cake pan and stick it in the oven for around 40 - 45 minutes or until the skewer comes out clean.
I had some friends over at dinner and they don't like to eat eggs, so this was perfect for the dessert, they loved it very much, well I couldn't keep my hands off it, I kept eating it, It was so lovely and delicious, thanks shireen for this lovely reicpe. you can see from the close up, how well it turned outl

Hi, everybody, Its been such a tiring day, the sun was in his peak, I did not want to go out anywhere!!, I think sometimes I fell I prefer winter!!, But, when I think of my plants, cleaning, and Laundry I might as well have sunshine!!, well, we never get satisfied with anything, that's the truth!!, A hard core truth.
 My kids were in London past one week, with my friends (howz that ?), H also went with them, so I was alone, they are coming back today and I wanted to bake something !!, My hands have been itching from one week, didn't know what to cook ? what to eat ?, Life was so boring, then I thought of Asha of foodies hope, long back  had written that as she would be cooking only for two, she wouldn't be very regular in posting recipes !! someday, I am going to be like that !!, what am I going to do, as whatever I cook or bake, my first critics are my kids !!, they tell if it was good or bad and I never eat what I bake just a bit sometimes !!.  Because of this my eldest gets into an argument with me, she says she hates me because I do not eat what I bake, I keep telling her that they are either too sweet for me, or has butter or oil in it !!, This keeps on everytime I bake something !!, The only way I could stop her is I just keep my mouth shut, she can only max screem at me, and walks of !! :), she is so sweet she is my best critic and loves to try anything and everything, bless her!!.

Eggless Avocado-Quinoa cakes

I bought 2 avocados, thinking I will make Glucomole, As my daughter was pestring me to do so.., and cut it in half, but, it was too hard still, she just got upset and left it their, and then my hubby suddenly planned to take the kids to London, The one which was cut got ripened the next day, which I made into Avocado pulkas, the other one was also ripe and I was wondering what I am going to do with it!!, Flash !! came an Idea of baking a muffin, then I remembered Madhu's Quinoa event and Lo!!, here I made them into small cakes with my new tins!!, My friends who visited during the day, had a cake each and said it was absolutely gorgeous!!.
The best thing was even though the cake was heavy when I cut opened it, it was so tender, soft and beautifully textured, I was so amazed (only thing I did not like was the smell of Avocado baking!!!). I sure want to tell you guys you must try it definitely.
UPDATED : I had a friend telling she tried these but they were sticking on to the tin, so I tried them again, and I have updated the recipe... with more pictures hope it is helpful, I inserted the cherries inside the cakes to show that I have tried them again and has turned out perfectly well, This time I had no Quinoa flour so I slightly toasted the Quinoa in a pan and powdered it in my Indian Mixie and made a fine powder/flour out of it and that is what I have used it.

EGGLESS AVOCADO-QUINOA CAKES

Eggless Avocado-Quinoa cakes

INGREDIENTS:
1 Medium sized Avocado (125 gms without peel)
1/2 cup Quinoa flour ( 90 grams)
1 Cup APF /Maida/ Plain flour
50 gms Butter  (melted)
1/2 cup Plain yogurt (home-made curds)
1/2 Cup Milk
1  cup Caster sugar
1/4 cup Dessicated coconut
1 tsp Vanilla essence
1/2 tsp Baking Soda
1 tsp Baking powder
1 tbsp Flax seed powder (organic soaked in 3 tbsp of hot water)
1 tbsp Custard powder
METHOD
Preheat the oven to Gas Mark 4/ 180 degrees.
Mash the avocado with a spoon nicely into a pulp and keep aside.
(Or otherwise chop the Avocado blend it in a mixie (food processor) to his add, Yogurt, Flax seed mixture and blend them again).
In a clean bowl sieve in All purpose flour, quinoa flour, Baking soda, and Baking powder until they combine well together
To the above  mix add Custard powder and dessicated coconut  mix well and keep aside.
In an other clean bowl, take the well mashed pulp of Avocado, melted butter, vanilla essence and plain yogurt and beat it well, it looks quite frothy.
(or as I said earlier use the blended Avacado mixture and add melted butter, vanilla essence and mix well together until they are well combined)
Then to this liquid batter slowly fold in the flour mixture little by little until it is completely used up or completely incorporated into the liquid ingredients, if it is little bit hard to handle like little bit stiff add a tbsp of milk and make it into a semi-solid state.
Grease the tins and pour the batter and bake the cakes for 30-35 minutes or until a toothpick inserted comes out clean.
Remove from the oven and then allow it cool before removing from the pan, as you can see it comes out clean, and I just topped it with cherries.
