Tropical Fruits in the Smoothie Bowl which is vegan as well! Do I need to say anything more?  Studded with tropical fruits like pineapple, Mangoes and coconut blended nothing can get better, the day begins with a summery spirit.

So, how have you all been?  I know I often do a peek-a-boo when it comes to my blog!  but, I won't abandon it for sure and I promise you, you will be seeing more here soon.   I am in India enjoying my holiday! well, this was a very surprising holiday actually and it got extended as well and I will be going back soon l!  I have been running around visiting all my family and friends it's a blessing to have people around you who love you right?  I feel I am blessed that way!

Here is a quick recipe for you all to enjoy! When you get your favourite Alphonso, pineapple and the fresh coconut which is very different from what I get in UK!  Then this Tropical Vegan smoothie is all I wanted to indulge. Put this bowl in the fridge and you would love it as is so cooling in a warm climate.

Vegan Tropical smoothie bowl

These Tropical fruits Pineapple, Mango, Coconut are blend to make a smoothie bowl which is just scrumptious and also a powerhouse of nutrients.

Smoothie Bowl Ingredients
1 Cup of Pineapple Juice from 1 cup of fresh pineapple
1/3 Cup of fresh Coconut
4 tbsp of Porridge Oats
½’’ Ginger
1 tbsp of Omega mix (A mix of sunflower seeds, sesame seeds, Pumpkin, Linseed)
¼ Cup of Agave Nectar / Sugar

Toppings
1 small Banana
¼ cup of Pomegranate
4 slices of Mango
Shavings of Coconut to garnish

Directions

  1.  Blend Pineapple chunks with ¼ cup of water, filter the juice out of it.
  2. Combine everything under smoothie bowl ingredients in a blender jar and blend until smooth and there are no chunks remaining.
  3. Pour into a bowl and add all toppings. Slice the Bananas, top it with pomegranate, Mango and coconut to make it more scrumptious and tasty.

Notes and Tips :  

The Oats which I have used here is Quaker Rolled oats.

I have used fresh coconut, to get a fresh coconut, break open a coconut, using a knife or scraper I take out the flesh chop into little pieces and blend them in a mixer. You can also buy fresh coconut in Asian Grocery shops or online.  If you cannot find fresh coconut you can use tinned coconut milk/ cream instead.

If you use fresh coconut, when you break it open you get coconut water in it, filter the water sometimes there will be remnants from the coconut skin, you can even use this water to blend with the pineapple chunks to get the fresh juice.

Burgers - Quinoa and cannelliniQuinoa grain pronounced as (KEEN-WAH) has been called the “Gold of Incas”.  Using them in making a Burger gives an Oomph!! Factor and makes it a healthy option, It is one of the super foods because of its super good qualities.
Quinoa has a nutty taste, I would say it’s an acquired taste.  It is a complete protein rich, high in Iron, magnesium, and fiber. Though am not a big fan of quinoa I started using it when I started learning more about it.
I started making Burgers when my kids loved Mac Donald burgers after we moved to the UK!  Kids need to eat good healthy food and I am always very particular about it. These Burgers were a good idea, I started incorporating a lot of ingredients in them which they wouldn’t know or fancy them. (This all happened when they were little!).


When kids were so accustomed to eating Indian food and that is what you used to take in your lunch box and suddenly moving to a new country changed everything!  They didn’t want to take rice in their lunch box, they were happy with Chapatis! They said it was difficult for them to sit and eat and they wanted something they could just hold in their hand and bite into.  They had other kids staring into their lunch box!  Some of them would not like the strong flavours when they open their lunch box.  They had hundreds of things in their little head to deal with.

That’s when I started making sandwiches for them and slowly I started making my own bread.  I used to bake twice every week with different ingredients and flavours!  Then I started exploring and started making their lunch box more interesting and delicious.  But, even today my kids remember the lunch box they used to carry when they were in India!  They used to have a snack break and it had interesting healthy snacks with dips and mini versions of Indian food with interesting sides.  My daughter who remembers most of the things than the other two says how her class mates would love her lunch box.
I used to teach in schools every year, here in the UK for some ethical assignments where they introduced different countries and their food habits.  Children would enjoy my way of cooking and would wonder and ask me; Do you really cook like this every day?  and I would say yes, I do.   They were surprised!   but, most Indian households do the same, I am not any special. Every day I cook from scratch and I don’t have anything store bought!
Being a vegetarian after coming here I realized people and doctors asking me if I do get enough nutrition!  I really want to scream out tell the world that being a vegetarian is not a sin, I do get enough of everything!  Unbelievably my grandmother lived up to 106 years, she had a fantastic memory power, good eyesight, and good hearing as well.  Because of her fall, she had no strength in her body, otherwise, she was a stubborn little devil.
Read this post about why and how I started using quinoa you would know how I discovered it, and it has become a staple in my pantry now!
Coming back to these burgers, I usually have few beans soaked and drained (sometimes sprouted) and frozen always.  Which really comes in handy for my quick curries dry or gravy based to go with my phulka (Indian flat bread without oil).
I have used Cannellini beans with some kale for more nutritious Burger!

Quinoa and cannellini Bean Burgers

Ingredients

  • 4 tbsp olive oil
  • 1 orange pepper (use any coloured pepper )
  • 3 cloves garlic
  • 1 Onion
  • 2 medium potatoes
  • 1/3 cup Quinoa
  • 2 cups Cannellini Beans cooked
  • 1 cup water
  • 1 tsp Italian herbs
  • 1 cup panko Bread crumbs
  • Fistful Kale leaves
  • 1 tbsp chilli flakes
  • 1 tsp cumin powder
  • 2 tbsp Omega -3 mixed seeds
  • 1/3 cup walnuts ( fistful of walnuts)
  • 2 Bread slices** (check notes)

Paste:

  • 2 to 3 tbsp corn flour
  • 1/3 cup water or as needed

Instructions

  • Wash and Soak Cannellini Beans overnight. Adding a pinch of soda helps in soaking properly and when soaked it also helps in reducing the flatulence beans tend to cause. Next day, wash the beans very well again and cook them to perfection. (use double the quantity of water when cooking I use a pressure cooker. Drain the water from the beans and use only the cooked beans. Do not throw away the water and you can use this to cook Quinoa and also use the water to make a paste.
  • Rinse quinoa three to four times. Drain the water then in a saucepan bring 1 cup of water to boil add quinoa to it then reduce the flame to a simmer. Cover and cook for 10 to 12 minutes until all the water is absorbed, keep an eye you don’t want it burnt. If you feel it has not cooked to perfection add another ¼ cup of water.
  • Cook potatoes. Chop Onions, Garlic, and Ginger. Chop Orange pepper, wash and chop a handful kale. Chop fresh parsley.
  • Toast walnuts, grind them to a powder and then 2 bread slices grind them to a powder.
  • In a wok heat Olive oil, add a tsp of Italian herbs and then some chilli flakes, 3 omega seed mix fry for a minute to this add chopped onion, crushed garlic and ginger, sprinkle of salt to soften it up quickly add Kale and sauté for 2 minutes.
  • Remove it on to a big bowl to this add peeled and mashed potatoes, chopped orange (green) pepper, cooked quinoa, fresh parsley, and Bread crumb mixture.
  • Taste the mixture to adjust the spices. Make 6 to 8 patties depending on the size you want it, shape them like a Burger.
  • Using corn flour and water make a thin paste like consistency. Dip it into the corn flour paste then again roll on to the panko bread crumbs.
  • On a non-stick pan spread a table spoon oil and place 2 to 3 patties depending on the size of the pan cook them on both the sides with another 2 to 3 tbsp of oil to golden brown.
  • Alternatively you can bake in a oven Gas Mark 4 for 20 to 25 minutes, or until they become golden brown colour OR you can use an Air fryer and placing 4 burgers at 180 degrees for 12-14 minutes .
  • Place them between two burger buns. Serve them with your choice of sauce and then some fresh vegetables like cucumber, onions, Tomatoes and some herbs and salad leaves. I served them with some Home made Mustard sauce.,

Notes

Use any other Beans instead of cannellini beans.  Adjust spices as per requirement.
** You can make this gluten free by substituting a gluten-free bread!  As Bread is used here to firm up the burgers.  You can also make it gluten-free by increasing it with cooked Quinoa and potato to firm it up or use eggs around 2.

Kodubale is a delicacy from Karnataka. It’s one of the deep-fried snacks from this cuisine.  “Kodu” means Horn like shape (after a lot of debating with my friends I got stuck to this now!) and “Bale” means Bangle! So, a dish made in the shape of Horn but turned it into a bangle to keep them intact! Whatever, this tasty snack is simply delicious you can’t just stop at one it's so very addictive!
This is my Amma’s (Mother) favourite snack. She loves making these often, my mom learned a lot from my periamma (Maternal aunt) and I too learnt a lot from her, she was a real foodie! She used to try new recipes and keep the authentic recipes alive as well.  I have never seen anybody like her in, my whole family.  She is no more and I miss her a lot.  Most of my recipes are what I have learned from these two women in my life.  This post is dedicated to my Mum and her late sister.

I remember very well my childhood days in our rented house it was a tiny kitchen she used to put the oil and little dough to each of us make us sit in front of her and ask us to make them, it was like a thumb rule, they should be perfectly in a bangle shape.
I remember my childhood days very well, it was a tiny kitchen in our rented house.  When she put the oil on heat Mom used to give us all a steel plate and little dough to each of us in a bowl, make us sit right in front of her and ask us to roll them into little bangle shaped rings, it was like a thumb rule, they should be perfectly in a bangle shape. She is still a perfectionist.
After she fried she used put them in little plates next to us and to munch on so we enjoyed our given task!! Sometimes we used to go crazy and we used to make the first alphabet of our name or any other shape we fancied, she wouldn’t mind as long as the job was done.  As she always made in large quantities. (I am sharing the same quantity here as given by her, and even today I make the same quantity).  But, after some time my sisters used to get bored and run away but, I always stuck with mom and completed the task!  Probably, that is one of the reasons I started learning and loving to cook from a very young age.  I was a sous chef to them!

I still remember the only time she would never allow us to make kodubale was during Gokulashtami festival, every item on the list had to made with Madi (Madi is a term used in Brahmin communities wherein men and women in the family after bath wears dried clothes untouched by other persons and cook food without eating anything as they make it for Puja and God!).  That’s the only one time she wouldn’t allow us to touch and mom, dad, and periamma used to make all the savouries and sweets they used to make around 30 dishes!  Those days were fun, all the three of us use to enjoy!! Gokulashtami is a big festival in Tamil families. The Mango leaves, a lot of flowers, different kind of fruits, Rangolis etc.., It was bliss!!

Kodubale/Kodbale (Spicy Bangle rings)! Delicacy from Karnataka

Kodubale is a speciality from Karnataka. Delicious, spicy and crispy perfect Bangle shaped snack which is deep fried, quick to make and tasty.
Prep Time 10 minutes
Cook Time 7 minutes
Total Time 17 minutes

Ingredients

  • 4 cups Rice Flour
  • 1 cup Chiroti rava
  • 3/4th cup Maida
  • 1 tbsp Omam (coarsely powdered)
  • 2 to 3 tbsp white Sesame seeds
  • 2 tsp salt ( salt as required)
  • 1/3 cup oil (Hot Oil)
  • 1/4 cup (2 sprigs) chopped curry leaves

Grind to paste

  • 1 cup freshly grated coconut ( pressed almost tightly)
  • 1 cup Dried copra (precisely 1/2 the dried copra)**
  • 20 Byadgi chillies**
  • 1/4 tsp Hing (Asafoetida)
  • 1/4 cup coriander leaves (loosely packed) (optional)

Instructions

  • Heat a pan and dry roast maida and chiroti rava till it is warm to touch. Keep aside to cool.
  • Take all the Ingredients under Grind put it in a mixie jar and grind to a smooth paste of coconut, dry copra, red chillies, Hing and coriander leaves (optional).

  • Take a bowl put all the dry ingredients together, Maida, Chiroti Rava, Rice flour, coarsely powdered Omam and salt as required mix well and keep aside.
  • Heat a ladle full of (1/3 cup) of hot oil and pour it on the dry ingredients, mix well and keep aside. Heat oil in a wok keep it on the stove to a medium flame.

  • Next add the ground smooth paste into the dry ingredient mixture mix well cover and keep aside.

  • Heat oil in a wok keep it on the stove to a medium flame. Take a little portion of the mixture in a separate bowl sprinkle water and start kneading it to make a dough! Do not add more water, sprinkle or use little water ( 1 to 2 tbsp of water) every time and start bringing it into a dough consistency. (check notes)

  • Once the dough has come together, knead it once and start making Kodubales! The dough should be rolled like a rope with the thickness of our little finger (about 3/4th of an inch) it should be perfectly in a round shape like a bangle with the end pinched and pressed to seal the edge on to the overlapping dough on which it is turned around so that they don’t get opened when they are fried in oil

  • once the oil is hot drop around 8 to 10 in one batch, depending upon how much oil and kadai you have used to fry! Keep frying them turning around now and then so they cooked well on both sides and turn crispy, on a medium low flame. They turn golden brown once they are done. Take them on to a kitchen towel so it absorbs oil.

  • Follow the same procedure with the rest of the dough ingredients deep fry all the them. Once done, store them in a air tight container it will stay up to 20-25 days! (unless you don't finish them before that)

Notes and Tips:
  1. I have given quite a large quantity so, please do remember do not add water completely to the mix. Divide the mix in parts, take one portion at a time and mix water little by little knead well and make the dough.  According to my mom If you make dough out of the whole mix and then use it, when you fry the rings they will absorb more oil, also they change the colour of the end product and they won’t have a long shelf life.
  2. Don't forget to add hot oil to the mixture and mix well, this is the trick for the crispiest kodbales!
  3. Keep the temperature of the oil constant for perfectly made crispy kodbales. Once when done and after you remove the kodbales bring the flame to low when you drop the rings then go back to the medium flame and fry them until done.
  4. When you roll out them into ropes sometimes you might find that they break or become hollow don’t worry it is natural. Again, knead them into the dough, and roll them they will be fine.  Do not extra Maida or anything else to make it stiffer.  Just knead well and use it.
  5. Seal the edge after you overlap it onto the main ring, so it won’t open up.
  6. Before frying check, the oil is sizzling hot! To find out hold your hand 3 to 4 inches above the oil you can feel the heat! Otherwise, check by adding a pinch of the dough into the oil, it should come up within seconds and float to the top that means your oil is at the right temperature. Now you can slide the kodbales carefully from the side of the wok don’t drop it from a height, this will splash the oil everywhere, so just slide them into the oil.
  7. Don’t leave the rings to dry out cover them with a cloth and the dough mixture too!
  8. I have mentioned you can make around 60, it depends on the size you make. It also depends the thickness of the dough rolled don’t make them too thick, it may be not crunchy, don’t make it very thin as well it will be very crunchy but loses its taste.
  9. I have used only Byadgi chillies, you can use a combo of Guntur and Byadgi chillies.
  10. You can use Roasted Gram (chutney dal) instead of sooji as some kannada people make it.
  11. My Mom sometimes uses 1 whole coconut it gives real taste.

Coconut - wonder ever if it is a nut, fruit or a seed?  It is all the three when using it in a loose definition.  But, today I learnt a new word DRUPE! Did you know ? Botanically speaking a coconut is a fibrous one-seeded drupe, also known as a dry drupe.  Interesting isn't it?

''A drupe is a fruit with a hard stony covering enclosing the seed (like a peach or olive) and comes from the word drupa meaning overripe olive. A coconut and all drupes have three layers:  the exocarp (outer' layer), the mesocarp (fleshy middle layer), and the endocarp (hard, woody layer that surrounds the seed).''

I only know something about coconut that it is a 'Tree of life' in very simple words - A tree which is useful from head to toe and beyond.  Every bit of the coconut tree is used.  We have come to know with loads of facts and figures that the benefit of coconut is very high.  In Ayurveda, it is said that it is good for people with pitta and Vata dosha. People with Kapha dosha can also use but in limits.  I won't go too detail about it, as I am not an Ayurvedic doctor but I have just heard these things from my sister who is an Ayurvedic doctor. Coconut is a  gluten-free product!, These days you get coconut flour which can be used in lots of recipes.  It is alkaline food high in saturated fat and fiber.  It also contains protein and some important minerals such as calcium, iron, potassium and magnesium.  Due to its high fat content, it is low GI and will decrease the overall GI of any meal when added.

I love coconut rice so much I keep making it often.  Do try out and tell me if you like it.  Here's how I make it.

SIMPLE COCONUT RICE:
Recipe Author: Jayasri

Prep time: 15 min

Servings: 4

Ingredients:
2.5 Cup cooked rice (Sona Masoori)
3 to 4 tbsp Oil
1 tsp Mustard seeds
1 tbsp Channa dal
1 ½ tbsp Urad dal
1 sprig curry leaf (12 to 15)
4 to 5 Green chillies
Pinch of Hing
1 fistful of peanuts
2 tbsp Broken Cashewnuts
Salt as required
Few sprigs of coriander leaves

Method:

  1. Cook the rice first, I usually use 2 cups of rice to this I use 4.5 to 5 cups of water. This depends on the rice you use, to make this kind of rice specialties I usually cook the rice al dente or cook slightly softer.  But, don’t make it too soft as it will spoil making any kind of rice variety.
  2. Once the rice is cooked and then the pressure is released spread it on a plate so the rice grains do not stick with each other.
  3. Meanwhile, in a wok add 2 tbsp of Ghee or Coconut Oil add freshly grated coconut and in a low to medium flame fry coconut until it changes to golden brown colour. Once done keep it aside until needed.
  4. Next heat oil in a wok, once it’s hot add tsp of mustard seeds, once it splutters add peanuts and fry it, it changes colour now add slit green chillies it turns slightly white in colour.
  5. Now add chana dal and urad dal they also change colour add tsp of cumin and curry leaves with a pinch of Hing.
  6. Add required amount of salt and the roasted coconut into the wok with chopped coriander leaves and cooked cooled rice, mix all the ingredients until well combined.
  7. Close the lid for 5 minutes in a low flame so the rice absorbs all the spices. Switch off the stove and serve it.

Coconut Masala Rice

Ingredients:
Same ingredients as above plus a masala powder to go with the above said ingredients. Except reduce the green chillies to 2 to 3.

Masala Powder:
1 ½ tbsp Urad dal
4 to 5 Byadgi chillies
½ tsp Pepper corns
1 tsp of white til seeds
3 tbsp of dry copra
1 tsp turmeric powder
½ tsp Oil

Method:

  1. In a wok heat oil in a low flame add pepper corns, urad dal, Byadgi chillies and white Til seeds and fry 2 to 3 minutes until they all change colour to this add turmeric and dry copra and fry for another 2 to 3 minutes until the copra changes golden brown.
  2. Once done transfer it to a plate to cool down.
  3. Once it’s cool grind it to a powder.
  4. Make the rice as said above exactly but, add this powder in step 6 with other ingredients mix well until well combined.
  5. Serve this with poppadum.

  • Ingredients:
  • 2.5 Cup cooked rice Sona Masoori
  • 3 to 4 tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tbsp Channa dal
  • 1 ½ tbsp Urad dal
  • 1 sprig curry leaf 12 to 15
  • 4 to 5 Green chillies
  • Pinch of Hing
  • 1 fistful of peanuts
  • 2 tbsp Broken Cashewnuts
  • Salt as required
  • Few sprigs of coriander leaves
  • Masala for Coconut Masala rice
  • Masala Powder:
  • 1 ½ tbsp Urad dal
  • 4 to 5 Byadgi chillies
  • ½ tsp Pepper corns
  • 1 tsp of white til seeds
  • 3 tbsp of dry copra
  • 1 tsp turmeric powder
  • ½ tsp Oil

Instructions

  • For the Simple Coconut Rice
  • Cook the rice first, I usually use 2 cups of rice to this I use 4.5 to 5 cups of water. This depends on the rice you use, to make this kind of rice specialties I usually cook the rice al dente or cook slightly softer. But, don’t make it too soft as it will spoil making any kind of rice variety.
  • Once the rice is cooked and then the pressure is released spread it on a plate so the rice grains do not stick with each other.
  • Meanwhile, in a wok add 2 tbsp of Ghee or Coconut Oil add freshly grated coconut and in a low to medium flame fry coconut until it changes to golden brown colour. Once done keep it aside until needed.
  • Next heat oil in a wok, once it’s hot add tsp of mustard seeds, once it splutters add peanuts and fry it, it changes colour now add slit green chillies it turns slightly white in colour.
  • Now add chana dal and urad dal they also change colour add tsp of cumin and curry leaves with a pinch of Hing.
  • Add required amount of salt and the roasted coconut into the wok with chopped coriander leaves and cooked cooled rice, mix all the ingredients until well combined.
  • Close the lid for 5 minutes in a low flame so the rice absorbs all the spices. Switch off the stove and serve it.

Oats and Oranges cookies

When the cookie monster attacks you, you can't just eat one and leave it especially these cookies :),  That's how my kids feel when they eat these cookies.  My children have declared that  this is the best cookie their mamma makes.  This is the best oatmeal cookies you can dream off.  I mean you can think off.  I would actually like to dedicate this cookie to my dear friend Madhuri, she loved them so much, she kept pestering me to post the recipe ( this was around 2 years back!! ) at last I made it to the blog!. I have been making these from around 3 to 4 years back, I know I never posted it.  It was usually in a jiffy I used to make it for some reason or the other, either to pack it for my kids or gift it to somebody and never got time to take photos, Oh! No, I did once but they were crap so discarded them.

These cookies are a killer combination, I would say combination made in heaven. If you have visited my blog you would notice that I love orange and chocolate combination a lot, works out perfectly a match made in heaven. I would say just like Tomato, Mozzarella, and Basil on a Bruchetta.

This is my top notch recipe. Everybody who has tasted my cookie love it.  I have always got a good feedback from everybody.  You should try it out and tell me if you like it.  Baking cookies is an easy peasy job and also kids would love to get involved, They are all grown up now and they don't get time to do things which they enjoyed when they were little.

Oats and Oranges cookies

Did I tell you, we had been getting some jobs done in our house and we had people working for various jobs and I fed them with my cookies and asking them about how they would rate it.  I remember one chap thinking!! he started munching and went on saying Mmm.., these are really delicious I can get the taste of orange and it really is crispy and chewy and very tasty.  This was my recent appreciation which I received from somebody whom I never knew before because I told them I was a blogger and would really appreciate their honest opinion.  what else would I need, one happy satisfied baker, they even asked me for the recipe!

Orange, Oates, Raisin and Chocolate chip Cookies

Oranges, Oats, Raisins and chocolate chip cookies

Makes: 15 to 18 cookies

Ingredients:

1 ¾ (175 grms) Cup Rolled Oats
50 grms ( 1/3 cup) Whole wheat flour (atta)
75 grm Butter
½ tsp Baking powder
1/8 th tsp Baking Soda
1 Cup Orange Juice ( from 2 Oranges)
2/3 cup Brown Sugar
¼ cup Raisins (dried grapes)
¼ cup Chocolate chips
2 to 3 tbsp of Orange zest

Method:

Zest the Oranges, Squeeze the Orange juice ( I got nearly one cup of orange juice minus 1 tbsp) and keep aside

Take a large bowl take butter and sugar blend them well until well combined.  To this add Oats, whole wheat flour mix them with your hand until they resemble like crumbs to this Baking powder and Baking soda. Mix well.

Mix Oats, whole wheat flour , Baking powder and Baking soda. Take these dried ingredients and mix well with the above mixture using your hands they will resemble like crumbs.

Add Orange juice and zest and make it into a dough-like consistency, to this add chocolate chips and Raisins.

The dough will be a bit sticky not to worry it will be fine.  At this stage put it in a refrigerator for 1/2 to 1 hour.

Preheat the oven to 180 degrees for  15 minutes.

Take a cookie sheet place a parchment paper, using a scoop make round balls and flatten them a bit and place them on the sheet with a gap of 1 to 1/2''.

Place the cookie sheet and bake for 15 minutes depending upon your oven temperature.  you will notice that it is turning into golden in colour.  Take it out and allow it cool, before munching.

Oats and Oranges cookies

Notes:

  1. I have baked these cookies many  times in different ways.  I have used just oats only without any flour and it turns out really well.
  2. You can bake it with one large Egg if you like to use egg in your baking.
  3. You can substitute all-purpose flour instead of whole wheat flour.
  4. So, which Oats to use? you can use any Oats, I use porridge oats or Rolled oats, If the Oats are thick just grind it into a powder and use it as needed.

Set Dosa

There will not be one south Indian who would say no to Dosas. I am kidding there might be a few who would prefer to eat Idli than Dosa or something else like a toast or probably muesli. I know few people who wouldn't want dosa as their breakfast when they were back home. Now they miss it's so much that even if you talk about it, they feel nostalgic and when they land in India the first thing they want to eat in the airport is Dosa! ( I am talking about my children especially!).

Basically, this is a crepe made out of lentils and Legumes. Dosas in those days were made with planning, it was a planned breakfast. Now #Dosas can be made anytime with or without planning!! as we don't have time for anything these days and tend to go for fast foods, even simple tasks like cooking a meal has become a tedious job. Dosa comes in various forms, these days you can find Dosa made using different ingredients and different methods. However, I don't mind eating it in any way or any form it comes, either fermented or not.

Set Dosa

#Dosa or Dosay or Dosai spell it, however, you like, they are just delicious. It is said that #Dosa was originated in Udupi, Karnataka. One of my favourite cuisines in the world. If you are in Karnataka you wouldn't or shouldn't miss eating in an authentic Udupi restaurant for a Kannadiga food.

Whatever it is, there are some basic Dosa which you wouldn't want to miss...Some of them are Masala Dosa, Plain Dosa, Uttapam, Rava Dosa and Set Dosa. You might get the same kind of accompaniments for all the dosas said above. But, set Dosa is the one, which is always served with fantastic saagu, chutney and sometimes aloo gadde palya (potato curry) in some restaurants.

Here are some of the dosas you might want to check out
Mysore Masala Dosa,Ready made Masala dosa mix , Beans Sprouts Dosa, Museli - Bran flakes Dosa, cous-cous Dosa , Paruppu Adai , Snake Gourd Dosa , Whole Green Gram Dosa, Onion Dosa, Rawa Onion Dosa, Puffed Rice/Mandakki Dosa, Carrot Dosa, Vegetable Uttappam with a twist.

Set Dosa

Set Dosa is one of the popular Breakfast dishes in Karnataka which you can find almost every hotel or darshinis, like Pongal, Idli, Masala Dosa, Uppuma etc. As far as I remember in those days when I was a little girl we used to eat 4 dosas in a set dosa plate, they used to be of palm size served with chutney and saagu ( a slightly spicy curry or korma with mixed vegetables or sometimes  with potato Saagu). Gradually set dosas changed to only three as most diners couldn't consume 4! either they used to share or just ask for half set dosa! Slowly they started serving 3 but I feel now dosas are an inch bigger than before. Now in my hometown if you go to any restaurant it is served only 3 a plate.

Masala Dosa is the ultimate version of Dosas nothing can beat it. But set dosa is like a full meal these crepes or pancakes are spongy and slightly thick these are also called sponge dosas it is less greasy too! comparably. It is cooked only on one side and should be served in a set of 3.

Here is how it is made, I have used Red rice to make it so you can see it is red in colour! You can substitute the same proportion for white rice and use the same method.

Set Dosa/ A Crepe or pancake with thousand holes

Cook time : 10 to 12 minutes
Serves : Depending on how much batter you use.

 

Set Dosa

Ingredients:

Red Rice / White Rice:  3 and 1/2 Cups
Black Urad dal / Uddina Bele: 3/4th Cup
Poha / Beaten Rice: 1 Cup
1 tbsp of Fenugreek seeds
1 fist full of Moong dal or Channa dal

Method:

Wash and soak Rice, Fenugreek seeds and Moong dal/Channa dal in a vessel
wash and soak Urad dal separately
Wash and soak Beaten rice separately.
They should be soaked for at least 6 hours. After 6 to 7 hours grind them into a very fine paste. I usually grind Poha/Beaten rice with rice so it grinds very well and then I grind Urad dal separately.
Once everything is finely ground to a fine paste. Mix all the batter and leave it to ferment for at least 8 hours or overnight, depending on where you live.
Once it is fermented take the batter as required for how much you would like to use and add some water to make into a pouring consistency like pancake.
You can add salt to the whole batter or add it to the quantity you are using.
Heat the tawa/ Pan / girddle season it with oil use a cut onion or a brush to do so.
Spread the batter in a circular motion to make set dosa,do not try to spread it thinly it should be thicker close it with a lid. Once cooked you will see loads of holes in them, then sprinkle oil and leave it for another minute then take it out and serve it with any accompaniment you have chosen with it.

Notes:
Sometimes when we make the batter in winter because of the cold weather it takes 15 hours to ferment! So, totally depends on the temperature just like your bread where yeast needs a warm temperature . But, the dosa batter needs warmer temperature than this.

You did hear it right? crunch your spoon!  that's because of the pie crust I have used to top it up.  I made these one pot pies when it was British Pie week! then why didn't I post it? don't ponder, I am already answering your question, Can you guess? I have been doing a bit of studying I joined college last year that's the reason I haven't been blogging much.   I was under a lot of pressure to submit my last bit of assignments and I wanted to finish it off ASAP.    So,  Now everything is done and dusted I can get back to blogging peacefully 🙂 Yay!  I am flying high.

Coming back to this recipe -  my family loves pies  and I often make them with different variations.  These pies were loaded with veggies and highly proteinaceous because of Hemp seeds, Lentils and it also contains Barley.  These are warm, rich, flaky, savoury, thick and creamy because of the coconut milk.  The filling and the short crust pastry are a match made in heaven and they are super delicious.

You can make it for a weekend meal, a weekday meal or for a meatless Monday blues or for a thanksgiving dinner or for a Christmas final course meal.  This curry is completely VEGAN by making a Vegan pastry, this would be a perfect meal deal for vegans.

When Indigo Herbs sent me some products to review in March, I was quite thrilled as they had already emailed me to check their website to choose the products.  I opted for a few products which I wanted to try out, I have yet to try out their carrot powder and I want to make a cake out of it! will update once I use it.  Their  products are Organic and super rich in goodness.  Indigo herbs have products for everybody in whatever walk of life you are in be a vegan, vegetarian, Athlete, you want to loose weight or gain weight, help fight infections or  boost your energy etc  there are various herbal powders to choose from.

Pie with Mixed Vegetables, Hulled Hemp seeds, Lentils, and Barley - A One Pot Meal
Prep time: 10 minutes
Cooking time: 25-30 minutes
Recipe level: Easy to Intermediate
Spice Level: Medium
Serves: 4 to 5 people
Shelf Life: 2 days in Refrigeration and can be Frozen too


Ingredients:
3 Cups of Chopped mixed Vegetables (wash and chop Broccoli,carrots,peas,corn and cauliflower)
1/3 Cup Organic Hulled Hemp Seeds
1/3 Cup Mixed Lentils (Green & Red)  and Barley
1 and 1/2 Cup (360ml) Coconut Milk
1 tbsp Organic coconut oil
3 tbsp Organic Walnut butter
1 veggie stock cube dissolved in 2 cups warm water
1 tbsp  Organic pumpkin powder
1 tsp of Organic coconut sugar
1 Onion
3 Small cloves of Garlic
2 Green chillies (optional)
1 tsp Ginger powder
1/2 tsp Turmeric powder
1 tsp Red chilli powder or Crushed Black Pepper (adjust as per taste)
1/2 tsp Cumin powder
1 tsp Coriander powder
2 Bay leaves
2 cloves
2" Cinnamon sticks
Salt as required

For the topping:

I have used  Frozen puff pastry which I love to make now and then.  If you do not want to make it you can use ready made puff pastry or short crust pastry.

Method:

  1. Cut the Veggies Broccoli, carrots, cauliflower and onions.
  2. Take a wok, add 1 tbsp of coconut oil when it's warm add cloves, cinnamon, bay leaves, finely crushed Garlic-Green chillies with chopped onions and turmeric powder into the wok and saute them for few minutes till the onions become translucent, add 1/8th tsp of salt and sugar this helps onion sweat soon. Now add 3 tbsp of walnut butter add the chopped vegetables sprinkle some water close the lid and cook for 20 minutes saute now and then to check if the veggies don't get stuck to the wok, cook in a low to medium flame and sprinkle little water if necessary. cook them until they are well done.
  3. In a pressure cooker, using the vegetable stock cook hulled Hemp seeds,Lentils and Barley. for 3 whistles (pressure cooker usually takes around 15 minutes in a medium flame to cook completely - check my notes*)  until well done, allow it to cool.
  4. Once the veggies are done add all the spice powders coriander, cumin and ginger. Mix well leave it for a 5 more minutes in a low flame, after 5 minutes add coconut milk.
  5. Taste and check the spices and adjust, add the cooked hemp seeds, Lentils and Barley then add required amount of salt taste again and adjust the salt.
  6. Close the lid and allow it cook for 10 minutes in a low flame. sprinkle herb of your choice and finish the curry.
    Spoon the veggie curry into 4 or 5 ovenproof bowls or Ramekins or a big casserole, filling to the brim so the pastry don't fall in the middle, then top it with shortcrust pastry or a puff pastry and bake it at 180 degrees 20-25 minutes or until they become reddish brown in colour.

Notes:

*I use a Pressure cooker to cook lot of my dals, rice etc when the food is completely cooked the pressure cooker whistles when it's on the third whistle leave for 2 to 3 minutes and switch off the stove.  This ensures the steam is still in cooker and cooks completely.
Cut a strip of the pastry and seal it on top the bowl or whatever container you are using and then spread the pastry on top this helps in the pastry not sinking in the middle and cooks properly.
Check the curry to your taste increase or decrease the spices used as you prefer.

Pie with Mixed Vegetables and Hulled Hemp seeds - A Review for Indigo Herbs

This can be done in 45minutes to 1 hour, A perfect one pot meal, with the goodness of Hemp and highly protein packed. Delicious one pot meal

Ingredients

  • 3 Cups of Chopped mixed Vegetables wash and chop Broccoli,carrots,peas,corn and cauliflower
  • 1/3 Cup Organic Hulled Hemp Seeds
  • 1/3 Cup Mixed Lentils Green & Red and Barley
  • 1 and 1/2 Cup 360ml Coconut Milk
  • 1 tbsp Organic coconut oil
  • 3 tbsp Organic Walnut butter
  • 1 veggie stock cube dissolved in 2 cups warm water
  • 1 tbsp Organic pumpkin powder
  • 1 tsp of Organic coconut sugar
  • 1 Onion
  • 3 Small cloves of Garlic
  • 2 Green chillies optional
  • 1 tsp Ginger powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Red chilli powder or Crushed Black Pepper adjust as per taste
  • 1/2 tsp Cumin powder
  • 1 tsp Coriander powder
  • 2 Bay leaves
  • 2 cloves
  • 2 " Cinnamon sticks
  • Salt as required

Instructions

  • Cut the Veggies Broccoli, carrots, cauliflower and onions.
  • Take a wok, add 1 tbsp of coconut oil when it's warm add cloves, cinnamon, bay leaves, finely crushed Garlic-Green chillies with chopped onions and turmeric powder into the wok and saute them for few minutes till the onions become translucent, add 1/8th tsp of salt and sugar this helps onion sweat soon. Now add 3 tbsp of walnut butter add the chopped vegetables sprinkle some water close the lid and cook for 20 minutes saute now and then to check if the veggies don't get stuck to the wok, cook in a low to medium flame and sprinkle little water if necessary. cook them until they are well done.

Home made Masala Dosa Mix

Dosaay or Dosa, when I hear that word my mouth waters, at least, I would say for most of the south Indians it would right?  If you got the batter ready your breakfast is easy peasy.  Just like Idlies it is comfort healthy and classic. A must breakfast in every south Indian home with lots of variations. If I make the batter once it stays up to almost a week and we can make as many variations as we like.  I haven’t kept the batter for a week usually 3 days max and a minimum of 2 days at most.

Back home in Bangalore we have lots of Darshini’s and exclusively Dosa joints who make just Dosa, there is always a big crowd, any time of the day.  When you spread the Dosa on the tawa (Girdle) whole house is filled with the aroma and all I can say is you just can’t say no.  The bile juices are aroused and fill your tummy making you run to the kitchen.  That’s what my children say!

Every morning at least 4 to 5 times I need to keep calling them to come down and have their breakfast. I mean  Literally break the fast as they don’t get up until past 12 (that’s when they have their holidays).  When it's Dosa they come running down when they get the aroma of Dosa right into their Duvet.

When I say dosa their next question is ‘’amma jothegenoo’’ (what’s with it?) aloogadde palya maadideeyaa?  (Have you made potato curry to go with it?)  Standard question and answer which they ask and answer themselves.  Because I don’t have to because they know I would definitely make it!  Do you know why my children love to go to India just to eat masala dosa their first preference then visiting the family, Last time when we visited almost 4 days in a week we had breakfast outside, I thought my mum had some time off from her cooking spree up and early in the morning so she can plan and cook leisurely our Lunch and Dinner :).  Every time when we visit India and every hotel they visit especially my twins - one orders Dosa and the other Idli.

When they come home from Uni now, the first thing they text me is Amma make Dosa/ Idli.  Especially my son thinks I am the loveliest/greatest/awesome etc etc, mum in the universe on every morsel he eats. My girls keep laughing and tell me amma he is buttering you up.   He brings out all the Adjectives possible to praise me.

So, all this started because of these twins from past 2+ years.  I make a lot of readymade stuff at home for my hubby who keeps travelling even though he loves Dosa and Idli he prefers to take something he can cook quickly like a one pot meal.  When my children left for Universities I started worrying about their food habits, especially my son who loves south Indian food, my daughter she manages with pasta but not him.  He needs his rice and sambhar at least once in a day.

That’s when I started planning to make readymade food and freezer meals.  I cook and freeze some meals so that they can just take it out and warm them up (and I keep filling up their freezer now and again!)  I make readymade Idli batter and Dosa batter because they did not like the shop bought ones, unfortunately.  This Dosa batter seems to be close to the home-made authentic Dosa batter so my children say that's their verdict.  That’s what my family say!  I had never thought of sharing it.  One of my friends asked me as she liked it when she had it at my place and suggested why not post it on the blog.  Sometimes I get scared to post thinking people may not like it or if it is not up to the mark, but as my friend said ‘’Jay you can’t please everybody, at least, it may be useful for some, go ahead and post it’’ my kids wanted me to share it as they said, it’s useful for their friends too. I have a few fans because of my children's friends.  I will share some of my ready-made mixes.  Keep checking my blog for updates.  So here is my recipe.

I would like to tell you before that it is not the original authentic batter which is usually soaked for few hours and had to get fermented before use.  This is nearly there.  Tastes good (I won’t say great because I want you to try and tell me if it is really a great recipe).

Home made Masala Dosa Mix

INGREDIENTS:

2 1/4 cups of Rice flour
½ Cup Urad Dal flour (I use readymade powder)
½ Cup Aval/Poha
½ Cup fine Semolina (Upma Rava)
1 tbsp powdered Methi flour
4 tbsp of Gram Dal flour (Besan flour)
1 tsp Eno fruit salt (check my notes)

METHOD:

Dry Roast the rice flour, Gram flour and Urad Dal flour for few minutes, until it is slight warm enough.  Allow it cool down. Then dry roast Aval and Rava (Semolina) until they are warm enough as well.  Allow it cool down as well.

Once Aval and Rava is cooled down grind them to a very fine powder and then mix it with other flours.  To this add Eno fruit salt and sieve them 2 to 3 times until they are well blended together.  I pack these in small air tight pouches so they can use one pouch at a time.

TO MAKE DOSA BATTER

To the above mix, you can add water as much is needed to make it into a Dosa batter consistency and add salt as required and proceed to make Dosa as is usually done.  This Dosa turns out to be very crispy and has a good colour as well.

NOTES

  • You can use this Dosa batter as said above like readymade mix.
  • You don’t have to make it immediately prepare this flour without the Eno fruit salt. Day before just add water as needed and leave it to ferment overnight and make Dosas in the morning!  You don’t have to grind anything saves your time.
  • I don’t use any preservatives but if you want you can add ½ tsp of citric acid they say it’s a mild preservative. But, as far as I know all preservatives have their minus points.  I read that if you have IBS problems or digestive problems it might trigger on a longer usage.
  • For the above flour mix, I mixed around 2 ½ liter of water. I haven’t specified how much water because the flours I use and other ingredients I use may differ from the products you use.
  • I make my own methi powder.

Pineapple Rice Kesari

Hi Everybody, Hope you are all doing well, thank you all for still visiting me and leaving your valuable comments which has always been a big inspiration for me to come back to blogging. It's been more than a year and I haven't blogged ever since, been through lot of things and, as they say “Old wine in a new bottle” finally here I am with a new domain name and my own website, which is still under construction.

As the days go by I will try my best to make this site more user friendly and post all the things I have cooked and baked this past year which I have captured with my new found love, yes that’s right, my new camera which my Hubby presented me with on my last birthday, I am slowly learning everything about it, still toggling around, trying to learn how things work. WordPress and Canon are two new things I need to master... ahem, not really but, I will try my best!

I was pondering about what to write about in my first post, and wasn’t sure when this was going to happen either, and I guess everything seemed to take its own course. Today is somebody’s birthday; this person is very special to me in every way, so I decided I will dedicate my first post to this person in my life.

I hadn’t decided of cooking anything special as that person will not be able to eat what I have cooked, but my daughter decided otherwise, saying “It’s ok mum, you make something sweet and I’ll eat it”. So I decided to make this sweet (as a last minute plan) and had to take a quick photo of this (Photo courtesy: my dear daughter) and she decided I should post it today, start with a sweet note and make this my first post on the website!

Some things are my favourite when it comes to food; I love all kinds of fruits and vegetables, but, if somebody asks me which fruit you like I always say its Pineapple, I love pineapple and it is a versatile fruit for me, I just use it all kinds of sweets and savoury dishes I prepare, I just love the smell when it is cooked or baked or just eaten raw. How much do you love this fruit? Tell me how you use it in your cooking I would love to learn more ways of using it. Pineapple is one such fruit which is very good for your health too. Will update a few things I have read and googled about it soon watch this space.

Coming back to this recipe this is the usual Rava Kesari we make at our homes,  Here I have used Rice and instead of Rava(Semolina). It’s easy to make and tasty to relish.

Recipe Source: Original
Cooking time: 30 to 40 minutes
Serves: 3

INGREDIENTS:
1/3rd Cup Rice
3/4th cup Grated Pineapple
1 ½ cup Sugar*
1 tsp of Cardamom powder
Few strands of Saffron
Pinch of edible camphor
1 ¼ Cup Water
½ Cup Milk and 3/4th cup water
¼ cup Ghee

Garnishing:
2 tbsp Ghee
8 to 10 Dry Grapes (raisins)
8 to 10 Cashew nuts Broken

METHOD:
I used ½ of Pineapple and I got around 3/4th cup of grated pineapple, heat a tbsp of Ghee and add the pineapple with the juice and allow it to cook in a low flame, meanwhile in a pressure cooker cook the washed rice with ½ cup milk and ½ water and keep aside.
While you are preparing these in another bowl add sugar and 1 cup water and allow it to boil to a single thread consistency. Once it has reached single thread take it out and pour it into the wok which has pineapple cooking in it, Meanwhile your cooker would have cooled down as well, add cooked rice into it and keep stirring add another 2 tbsp of Ghee and cardamom powder and edible Camphor into it, a few minutes later you will notice they all come together and leave the side of the wok, just like a halwa consistency. Take it out immediately from the stove and keep aside.
In a small wok heat one or two tbsp of Ghee fry dry Grapes (raisins) and Cashew nuts once they change colour add it to the pineapple Rice Kesari
Serve warm or cold as you like.

NOTES:
*Increase or decrease Sugar depending on the sweetness of the pineapple
Edible Camphor should not be used more than a pinch as the smell is quite strong, if you don’t get it where you live you can omit it.

I think this is the month of Dutch specialties  Yes, I will be posting an other one, which I baked but I haven't posted.  Already this post is 1 day late, This is a very delicious cake I baked,  so say our customers (@home!!), and they recommend my cake to our friends as well, My kids have been praising me so much, they just loved the coconut in it.., If your coconut maniac like me you will just love this, I myself couldn't resist eating it.

As always I have changed the recipe to Baking it Eggless and also made it vegan.  I was a bit scared how it turns out.., to my astonishment, it was a total success.
Before going on to my cake recipe, I have to tell you that this might be not your choice of cake, as I have used a different flour, you might not want to try it out, If you don't like you can just stick on with All purpose flour / Maida flour / plain flour.  The cake was a bit chewy but so so soft couldn't believe it.
This is how I made it..
EGGLESS AND VEGAN DANISH CREAM CAKE - DROMMEKAGE FRA BROVST
Recipe source : Diana's Desserts

INGREDIENTS:

125 gms Self Raising flour
100 gms Barley Flour*
1 tsp Baking Powder
1 tsp Baking Soda
1/4 cup oil / coconut oil / soya spread
200 ml Coconut milk ( I used ready made )
1/4 soya custard milk ( or use just 1/4 cup warm water)
1 tbsp Apple cider Vinegar
1 tsp Vanilla essence

FOR THE TOPPING 
100 grms dessicated coconut
225 grms of brown sugar
1/4 cup powdered oats
1 tbsp coconut oil

METHOD:
Preheat Gas Mark 4 / 180 C**
Grease a baking 8 - 9'' square or round tin with parchment paper and keep it ready.
Take all the dry Ingredients in a large bowl both the flours, baking powder and baking soda, sieve them all well together and keep aside.
.In an other bowl take coconut milk, vanilla essence, oil, Apple cider and coconut sugar, beat them all until well combined.
Immediately start adding the dry Ingredients in little quantities, until all of them is incorporated completely.
Pour this batter into the tin and bake for 20 - 25 minutes ***, until well baked or a tooth pick inserted comes out clean.
Meanwhile when it is baking make the topping and keep it ready.
Once the cake is ready remove it from the oven, leave the oven to 200 degree / Gas mark 5.
Spread the topping on top of the baked cake, put it back into the oven and bake it for an other 10 minutes, Remove it from the oven cut it into squares and serve it.

This total is not exactly a Danish cream cake, I have changed to my liking as this was a  challenge, we have made it Eggless according to the challenge.  To make it more healthier I have used Barley flour.  If you want the real Danish cream cake, check the link above and make this wonderful cake.  You will definitely love it.

VARIATION AND NOTES:
*I have used Barley flour for healthy baking you can just substitute with plain flour which might have a superb  texture and won't
** I baked this in Gas mark 3, as always I say my oven gets too hot and burns loads of my baking!!
*** As I baked it in lower Gas mark, I had to bake it for around 30-35 minutes.

VERDICT:
The cake was bit chewy, but very delicious, If you love coconut, this is the cake for you, My kids really loved it so much, I had never seen my children eating dessert immediately after food, they ate promptly and recommended to my friends too...
something new and something you should know...
I have used coconut palm sugar, which is not too sweet, it  was quite expensive, I started searching about this product and I have come to know much about it, I will do a post about this soon.., After that you can decide do you want to use it or not, I thought I could recommend it  to people with diabetes, even though it has low GI Index, it is high in fructose, as Googling I found out that sugar is sugar, and use it less is good.  This has a Caramalized taste, It is not too sweet, so your cake will not be too sweet, you can substitute ordinary sugar, brown sugar, caster sugar etc.., It is golden brown in colour and is unprocessed.
