These Delicious fresh Dough Balls are made from scratch and are great as a starter, appetizer or as a snack. They are so soft and addictive pizza hut style.
Served with just Olive oil seasoned with a dash of pepper and salt.

Christmas always brings me first-time memories after moving here! We never celebrated Christmas like I do it here. Christmas makes us so happy and feels like any other Indian festival I celebrate!, We bought a big tree two years back, before that I used to have a little one, and as a ritual, I bring out my Christmas tree on the 1st of December.

A few years back we were visited by our family friend and it was his first time here, as we get holidays during Christmas we took him to London, we walked and walked so much and ate this and that, we were so tired and terribly hungry by the end of the day, we decided have something filling before we left as it was nearing 12 O' clock!, we went looking for someplace to eat and the only place open was Pizza hut they were almost ready to shut down! But, they were ready to feed us, bless them as were so hungry we ordered these dough balls to start with, and we just fell in love with it! as it was during Christmas these were served with Garlic Butter, Olive oil seasoned with pepper and salt and my hubby's favourite was cranberry sauce. Then we had some more things to eat, full and came back home.

But, the taste never left me, 2 days later I wanted to try these dough balls the first time I made the balls little darker in colour I didn't like it, I wanted exactly the same way as in #Pizzahut! Again I made them the same week and lo! they were in perfect colour!
My Family just loved it, and this has become our family favourite and I make them especially during Holidays when all my family are at home. I do make variations of these now! and we still enjoy these basic dough balls.

Dough Balls #Pizzahut style

These delicious little dough balls are versatile so soft and addictive, served as a starter or snack! with any dips of your choice.
Prep Time 20 minutes
Cook Time 15 minutes
Total Time 1 hour 35 minutes
Servings 3

Ingredients

  • 200 grams Italian Tipo 00 flour ** Extra flour for dusting and kneading
  • 7 grams fast action dried yeast
  • 1 tsp salt
  • 140 -150 ml water
  • 3 tbsp Extra virgin Olive oil
  • 1 tbsp Italian herbs (optional)

Instructions

  • In a large bowl put the yeast, sugar and one or two tbsp of luke warm water and leave it for few minutes. When you see that it is bubbling up then you know that your yeast is active.
  • To this add salt and oil, then add the flour and mix well. Then add water. Then using your hands mix thoroughly and make it into a slightly wet dough.
  • Turn the dough onto to a well-floured surface and work it your hands for about 5 to 10 minutes until smooth and elastic. Leave it to rest for 45 to 1 hr
  • Place the well-kneaded dough into a well-oiled bowl and brush the top with oil and cover it with a clingfilm so it won't dry out.
  • Once the dough is double in size. punch the dough and inflate the air, Make little balls from it and place them on a baking sheet lined with parchment paper for 30 mintues to rise.
  • Meanwhile Preheat the oven to 200°C / Gas mark 6**. Brush the dough balls with milk/alternative milk. Bake these dough balls for 15 to 18 minutes, After 10 minutes reduce the oven temperature.
  • once done bring them out and bake the next batch until all the dough balls are baked. Serve them with olive oil seasoned with crushed pepper and salt. Or any of your favourite dips! Enjoy.

Notes

Italian Tipo 00 flour is finely ground than normal flour and will give your dough an incredible super smooth texture. I use this flour to make pizza as well and they turn out incredibly beautiful.
The same recipe above turns into an irresistible pizza as well.
Once it rises, punch down the dough and you can freeze it as well. The day you plan to bake take it out and leave it on the counter once it comes to normal temperature, continue the process to make either dough balls or pizza!
I usually bake at a low temperature as my oven gets very hot. Check your oven and bake.

We all love food, don’t we? When I go to the supermarkets I started noticing that we have hundreds of choices when it comes to buying food or ingredients right?  After moving here being a vegetarian I started reading labels which I never did before!  As I wanted to be sure whatever I was buying it.  We also never ever bought ready made food which was not so popular in Indian then.  we use different kinds of oils in India which usually is to that state we come from isn't it interesting?

Kale and Almond pesto
Kale famed as superfood belongs to the cruciferous family.  This is high in fiber (1 cup has 2.6grms), high in Iron, high in calcium, Fat-free, keeps cholesterol in check and rich in omega 3, Vitamin A, K and C.   Did you know that even though it is good for health? I read somewhere in Google search that it is not good for everybody.  You must also read about how it is best to eat it raw or cooked or steamed!
Let’s make this superfood pesto then…..


Kale and Almond Pesto with Roasted Red Peppers and goodness of Hemp seeds:

Prep time: 20 minutes
Total time: 15 minutes

INGREDIENTS:
300 grams  Kale*
50 grams of mixed herbs (Basil, Parsley, Oregano)
¼  cup Hemp seeds
1/3 cup Almonds
1 Large Red Pepper
4 Garlic cloves
10 large olives
½ tbsp chili flakes
1 tsp Himalayan pink salt
¼ to ½  cup Olive oil
¼ cup Parmesan cheese (optional)
METHOD:

  1. Take just the leaves of kale, do not use the stem as they will be very chewy, wash well and pat them dry.
  2. Take fresh herbs of your choice I have used Basil, Parsley, Oregano. Wash and clean the herbs pat them dry.
  3. Use a stove top or a grill and roast red pepper and Garlic, peel the skin off and keep it aside.

4. Toasted and cooled Almonds and Hemp seeds for few minutes this just helps in releasing the oil and enhances the flavour.

5. In a food processor combine Almonds, Hemp seeds, olives, garlic, mixed herbs, chilli flakes, roasted red pepper, salt, Kale start processing the machine. With the machine running slowly drizzle olive oil into the processor until the mixture is well blended but still has some texture pausing to scrape down the side so everything is well combined.


6. You can add parmesan if you like a creamier texture or you can completely omit it. I haven’t added it.   Only thing is you need to find out if the Parmesan is a vegetarian as Parmesan contains rennet.
7.  Taste and check if you need more salt and spice.  As some Kale may have a bitter taste.  Adjust accordingly.

Superfood Kale Pesto - Jamie's Italian Buyer's guide

NOTES:
You can use different nuts such as walnut, cashew (my favourite and creamier!), Pine nuts (my daughter’s favourite), you can use Brazil nuts (buttery) and Macadamia nuts they are creamier too wouldn’t think of Pistachios though ????!
You can add more olive oil to thin it down and also helps in preserving pesto.  If you are using it in pasta you can even thin it down with a dash of cooked pasta water too.   Store it in air tight container in the refrigerator covered for up to a week.  I suppose you can also freeze pesto in Ice cube trays. Once frozen transfer them to freezer bags and use them as needed but don’t forget to thaw it.
FOR VEGAN VERSION: Use Nutritional yeast instead of Parmesan cheese or completely omit it.
FOR NUT FREE VERSION:  You seeds of Sunflower, Linseed, Pumpkin seeds, or any other seeds instead of nuts.  But use it in less quantity otherwise it might dominate the taste of pesto.

Burgers - Quinoa and cannelliniQuinoa grain pronounced as (KEEN-WAH) has been called the “Gold of Incas”.  Using them in making a Burger gives an Oomph!! Factor and makes it a healthy option, It is one of the super foods because of its super good qualities.
Quinoa has a nutty taste, I would say it’s an acquired taste.  It is a complete protein rich, high in Iron, magnesium, and fiber. Though am not a big fan of quinoa I started using it when I started learning more about it.
I started making Burgers when my kids loved Mac Donald burgers after we moved to the UK!  Kids need to eat good healthy food and I am always very particular about it. These Burgers were a good idea, I started incorporating a lot of ingredients in them which they wouldn’t know or fancy them. (This all happened when they were little!).


When kids were so accustomed to eating Indian food and that is what you used to take in your lunch box and suddenly moving to a new country changed everything!  They didn’t want to take rice in their lunch box, they were happy with Chapatis! They said it was difficult for them to sit and eat and they wanted something they could just hold in their hand and bite into.  They had other kids staring into their lunch box!  Some of them would not like the strong flavours when they open their lunch box.  They had hundreds of things in their little head to deal with.

That’s when I started making sandwiches for them and slowly I started making my own bread.  I used to bake twice every week with different ingredients and flavours!  Then I started exploring and started making their lunch box more interesting and delicious.  But, even today my kids remember the lunch box they used to carry when they were in India!  They used to have a snack break and it had interesting healthy snacks with dips and mini versions of Indian food with interesting sides.  My daughter who remembers most of the things than the other two says how her class mates would love her lunch box.
I used to teach in schools every year, here in the UK for some ethical assignments where they introduced different countries and their food habits.  Children would enjoy my way of cooking and would wonder and ask me; Do you really cook like this every day?  and I would say yes, I do.   They were surprised!   but, most Indian households do the same, I am not any special. Every day I cook from scratch and I don’t have anything store bought!
Being a vegetarian after coming here I realized people and doctors asking me if I do get enough nutrition!  I really want to scream out tell the world that being a vegetarian is not a sin, I do get enough of everything!  Unbelievably my grandmother lived up to 106 years, she had a fantastic memory power, good eyesight, and good hearing as well.  Because of her fall, she had no strength in her body, otherwise, she was a stubborn little devil.
Read this post about why and how I started using quinoa you would know how I discovered it, and it has become a staple in my pantry now!
Coming back to these burgers, I usually have few beans soaked and drained (sometimes sprouted) and frozen always.  Which really comes in handy for my quick curries dry or gravy based to go with my phulka (Indian flat bread without oil).
I have used Cannellini beans with some kale for more nutritious Burger!

Quinoa and cannellini Bean Burgers

Ingredients

  • 4 tbsp olive oil
  • 1 orange pepper (use any coloured pepper )
  • 3 cloves garlic
  • 1 Onion
  • 2 medium potatoes
  • 1/3 cup Quinoa
  • 2 cups Cannellini Beans cooked
  • 1 cup water
  • 1 tsp Italian herbs
  • 1 cup panko Bread crumbs
  • Fistful Kale leaves
  • 1 tbsp chilli flakes
  • 1 tsp cumin powder
  • 2 tbsp Omega -3 mixed seeds
  • 1/3 cup walnuts ( fistful of walnuts)
  • 2 Bread slices** (check notes)

Paste:

  • 2 to 3 tbsp corn flour
  • 1/3 cup water or as needed

Instructions

  • Wash and Soak Cannellini Beans overnight. Adding a pinch of soda helps in soaking properly and when soaked it also helps in reducing the flatulence beans tend to cause. Next day, wash the beans very well again and cook them to perfection. (use double the quantity of water when cooking I use a pressure cooker. Drain the water from the beans and use only the cooked beans. Do not throw away the water and you can use this to cook Quinoa and also use the water to make a paste.
  • Rinse quinoa three to four times. Drain the water then in a saucepan bring 1 cup of water to boil add quinoa to it then reduce the flame to a simmer. Cover and cook for 10 to 12 minutes until all the water is absorbed, keep an eye you don’t want it burnt. If you feel it has not cooked to perfection add another ¼ cup of water.
  • Cook potatoes. Chop Onions, Garlic, and Ginger. Chop Orange pepper, wash and chop a handful kale. Chop fresh parsley.
  • Toast walnuts, grind them to a powder and then 2 bread slices grind them to a powder.
  • In a wok heat Olive oil, add a tsp of Italian herbs and then some chilli flakes, 3 omega seed mix fry for a minute to this add chopped onion, crushed garlic and ginger, sprinkle of salt to soften it up quickly add Kale and sauté for 2 minutes.
  • Remove it on to a big bowl to this add peeled and mashed potatoes, chopped orange (green) pepper, cooked quinoa, fresh parsley, and Bread crumb mixture.
  • Taste the mixture to adjust the spices. Make 6 to 8 patties depending on the size you want it, shape them like a Burger.
  • Using corn flour and water make a thin paste like consistency. Dip it into the corn flour paste then again roll on to the panko bread crumbs.
  • On a non-stick pan spread a table spoon oil and place 2 to 3 patties depending on the size of the pan cook them on both the sides with another 2 to 3 tbsp of oil to golden brown.
  • Alternatively you can bake in a oven Gas Mark 4 for 20 to 25 minutes, or until they become golden brown colour OR you can use an Air fryer and placing 4 burgers at 180 degrees for 12-14 minutes .
  • Place them between two burger buns. Serve them with your choice of sauce and then some fresh vegetables like cucumber, onions, Tomatoes and some herbs and salad leaves. I served them with some Home made Mustard sauce.,

Notes

Use any other Beans instead of cannellini beans.  Adjust spices as per requirement.
** You can make this gluten free by substituting a gluten-free bread!  As Bread is used here to firm up the burgers.  You can also make it gluten-free by increasing it with cooked Quinoa and potato to firm it up or use eggs around 2.

Oats and Oranges cookies

When the cookie monster attacks you, you can't just eat one and leave it especially these cookies :),  That's how my kids feel when they eat these cookies.  My children have declared that  this is the best cookie their mamma makes.  This is the best oatmeal cookies you can dream off.  I mean you can think off.  I would actually like to dedicate this cookie to my dear friend Madhuri, she loved them so much, she kept pestering me to post the recipe ( this was around 2 years back!! ) at last I made it to the blog!. I have been making these from around 3 to 4 years back, I know I never posted it.  It was usually in a jiffy I used to make it for some reason or the other, either to pack it for my kids or gift it to somebody and never got time to take photos, Oh! No, I did once but they were crap so discarded them.

Oranges, Oats, Raisins and chocolate chip cookies

These cookies are a killer combination, I would say combination made in heaven. If you have visited my blog you would notice that I love orange and chocolate combination a lot, works out perfectly a match made in heaven. I would say just like Tomato, Mozzarella, and Basil on a Bruchetta.

 I would actually like to dedicate this cookie to my dear friend Madhuri, she loved them so much, she kept pestering me to post the recipe ( this was around 2 years back!! ) at last I made it to the blog!. This is my top notch recipe. Everybody who has tasted my cookie love it.  I have always got a good feedback from everybody.  You should try it out and tell me if you like it.  Baking cookies is an easy peasy job and also kids would love to get involved, They are all grown up now and they don't get time to do things which they enjoyed when they were little.

Did I tell you, we had been getting some jobs done in our house and we had people working for various jobs and I fed them with my cookies and asking them about how they would rate it.  I remember one chap thinking!! he started munching and went on saying Mmm.., these are really delicious I can get the taste of orange and it really is crispy and chewy and very tasty.  This was my recent appreciation which I received from somebody whom I never knew before because I told them I was a blogger and would really appreciate their honest opinion.  what else would I need, one happy satisfied baker, they even asked me for the recipe!

Orange, Oates, Raisin and Chocolate chip Cookies

Oranges, Oats, Raisins and chocolate chip cookies

Makes: 15 to 18 cookies

Ingredients:

1 ¾ (175 grms) Cup Rolled Oats
50 grms ( 1/3 cup) Whole wheat flour (atta)
75 grm Butter
½ tsp Baking powder
1/8 th tsp Baking Soda
1 Cup Orange Juice ( from 2 Oranges)
2/3 cup Brown Sugar
¼ cup Raisins (dried grapes)
¼ cup Chocolate chips
2 to 3 tbsp of Orange zest

Method:

Zest the Oranges, Squeeze the Orange juice ( I got nearly one cup of orange juice minus 1 tbsp) and keep aside

Take a large bowl take butter and sugar blend them well until well combined.  To this add Oats, whole wheat flour mix them with your hand until they resemble like crumbs to this Baking powder and Baking soda. Mix well.

Mix Oats, whole wheat flour , Baking powder and Baking soda. Take these dried ingredients and mix well with the above mixture using your hands they will resemble like crumbs.

Add Orange juice and zest and make it into a dough-like consistency, to this add chocolate chips and Raisins.

The dough will be a bit sticky not to worry it will be fine.  At this stage put it in a refrigerator for 1/2 to 1 hour.

Preheat the oven to 180 degrees for  15 minutes.

Take a cookie sheet place a parchment paper, using a scoop make round balls and flatten them a bit and place them on the sheet with a gap of 1 to 1/2''.

Place the cookie sheet and bake for 15 minutes depending upon your oven temperature.  you will notice that it is turning into golden in colour.  Take it out and allow it cool, before munching.

Notes:

  1. I have baked these cookies many  times in different ways.  I have used just oats only without any flour and it turns out really well.
  2. You can bake it with one large Egg if you like to use egg in your baking.
  3. You can substitute all-purpose flour instead of whole wheat flour.
  4. So, which Oats to use? you can use any Oats, I use porridge oats or Rolled oats, If the Oats are thick just grind it into a powder and use it as needed.

  • 1/8 th tsp Baking Soda
  • 1 Cup Orange Juice from 2 Oranges
  • 2/3 cup Brown Sugar
  • ¼ cup Raisins dried grapes
  • ¼ cup Chocolate chips
  • 2 to 3 tbsp of Orange zest

Instructions

  • Zest the Oranges, Squeeze the Orange juice ( I got nearly one cup of orange juice minus 1 tbsp) and keep aside
  • Take a large bowl take butter and sugar blend them well until well combined. To this add Oats, whole wheat flour mix them with your hand until they resemble like crumbs to this Baking powder and Baking soda. Mix well.
  • Mix Oats, whole wheat flour , Baking powder and Baking soda. Take these dried ingredients and mix well with the above mixture using your hands they will resemble like crumbs.
  • Add Orange juice and zest and make it into a dough-like consistency, to this add chocolate chips and Raisins.
  • The dough will be a bit sticky not to worry it will be fine. At this stage put it in a refrigerator for 1/2 to 1 hour.
  • Preheat the oven to 180 degrees for 15 minutes.
  • Take a cookie sheet place a parchment paper, using a scoop make round balls and flatten them a bit and place them on the sheet with a gap of 1 to 1/2''.
  • Place the cookie sheet and bake for 15 minutes depending upon your oven temperature. you will notice that it is turning into golden in colour. Take it out and allow it cool, before munching.

Notes

I have baked these cookies many times in different ways. I have used just oats only without any flour and it turns out really well.
You can bake it with one large Egg if you like to use egg in your baking.
You can substitute all-purpose flour instead of whole wheat flour.
So, which Oats to use? you can use any Oats, I use porridge oats or Rolled oats, If the Oats are thick just grind it into a powder and use it as needed.

Beetroot soup

Don't wonder why I am posting a cold soup when we still have chilled winter days here, as of my last post when we had that beautiful day the saga continued,  I needed something cold to eat as well, I did quite a lot shoots that week, as I went crazy when I saw the sun!

After long day's work in the garden, I didn't want to spend too much time in the kitchen.  I wanted to fix something quickly.  When I stood in my refrigerator my mind went blank!  kidding! my mind was blank because I hadn't made up my mind about what to cook ?  Let me make a one pot meal with rice dump everything in my cooker and that's it! My daughter came down and said make some soup mom as we have some French Bread.  So, Ok!  I know what to make,  next is which vegetable or any other ingredient? That's when I saw these bunch of Beetroots I had, actually loads of them!  I decided on making a Beetroot soup but didn't want to have it hot so decided on making it cold.  I had been chopping and trimming all my plants, I have a Bay leaf tree and a Kaffir Lime tree you must have noticed it in my last post, I used them to decorate my styling :), I used those fresh cut leaves in my soup.

This soup was so delicious for the weather, it had some sweetness and it is very easy to make.  It might not be everybody's cup of tea if you like beetroot you might like this.  But, it went so very well with my bread I had 2 cups of it, I had some left over which I had it in my fridge next day hubby came home and had it.  He loved it too.

Cold Beetroot Soup or Chilled Beetroot Soup

Beetroot soup

Ingredients:

3 Medium Sized Beetroots
1'' Ginger
3 Garlic cloves
4 Kaffir Lime Leaves
2 Cups thick Yogurt
2 to 3 tbsp Cre'me Fraiche (optional)
4 to 5 tbsp Chopped Chives/Coriander
1 tbsp Cumin seeds
2 to 3 Bay Leaves
4 Cloves
2 tsp Black pepper

Method:

Wash, Peel and chop Beetroots. Roast Cumin seeds and pepper until the cumins crackle.
In a pressure cooker take chopped Beetroots, peeled Garlic cloves, Kaffir lime leaves, Bay leaves, roasted cumin, roasted Black pepper and cloves.
Steam them all in 1 cup of water for 3 whistles.
Once cool discard  the Bay leaves and Kaffir lime leaves and rest put them in a blender and blend them into a smooth paste.
Add another half cup of water if needed when blending them into a smooth puree, to this add 2 cups of yogurt and salt blend well together.
If you want it thick and creamier add more yogurt or add water  to make it slightly semi liquidy.

Season it with pepper and salt if  you need, serve it with chopped chives or cilantro, I used chives and oven roasted crispy Kale and some croutons and some Cre'me Fraiche before serving.

Notes:

This soup is on a bit sweeter side because of the beetroots, even if you seasoned more with peppercorns it really doesn't help much, I would just say, have it as it is, with a tolerable seasoning and enjoy it as it is.If you don't find Kaffir lime leaves you can substitute with one tbsp of lemon juice or just omit it from the recipe

Delicious one pot meal!  sound's really interesting isn't it? what else do you need to know?  Oh! yeah! the recipe of course 🙂 you need to scroll down to if you don't want to read about my ramblings, as you already know I just don't stop talking!  The Pie is so easy to make it just takes under 45 minutes, what more can you ask for?  You just need to crunch your spoon into it and devour the yummy pie!  watching your favourite soap on your cozy couch.

You did hear it right? crunch your spoon!  that's because of the pie crust I have used to top it up.  I made these one pot pies when it was British Pie week! then why didn't I post it? don't ponder, I am already answering your question, Can you guess? I have been doing a bit of studying I joined college last year that's the reason I haven't been blogging much.   I was under a lot of pressure to submit my last bit of assignments and I wanted to finish it off ASAP.    So,  Now everything is done and dusted I can get back to blogging peacefully 🙂 Yay!  I am flying high.

Coming back to this recipe -  my family loves pies  and I often make them with different variations.  These pies were loaded with veggies and highly proteinaceous because of Hemp seeds, Lentils and it also contains Barley.  These are warm, rich, flaky, savoury, thick and creamy because of the coconut milk.  The filling and the short crust pastry are a match made in heaven and they are super delicious.

You can make it for a weekend meal, a weekday meal or for a meatless Monday blues or for a thanksgiving dinner or for a Christmas final course meal.  This curry is completely VEGAN by making a Vegan pastry, this would be a perfect meal deal for vegans.

When Indigo Herbs sent me some products to review in March, I was quite thrilled as they had already emailed me to check their website to choose the products.  I opted for a few products which I wanted to try out, I have yet to try out their carrot powder and I want to make a cake out of it! will update once I use it.  Their  products are Organic and super rich in goodness.  Indigo herbs have products for everybody in whatever walk of life you are in be a vegan, vegetarian, Athlete, you want to loose weight or gain weight, help fight infections or  boost your energy etc  there are various herbal powders to choose from.

Pie with Mixed Vegetables, Hulled Hemp seeds, Lentils, and Barley - A One Pot Meal
Prep time: 10 minutes
Cooking time: 25-30 minutes
Recipe level: Easy to Intermediate
Spice Level: Medium
Serves: 4 to 5 people
Shelf Life: 2 days in Refrigeration and can be Frozen too


Ingredients:
3 Cups of Chopped mixed Vegetables (wash and chop Broccoli,carrots,peas,corn and cauliflower)
1/3 Cup Organic Hulled Hemp Seeds
1/3 Cup Mixed Lentils (Green & Red)  and Barley
1 and 1/2 Cup (360ml) Coconut Milk
1 tbsp Organic coconut oil
3 tbsp Organic Walnut butter
1 veggie stock cube dissolved in 2 cups warm water
1 tbsp  Organic pumpkin powder
1 tsp of Organic coconut sugar
1 Onion
3 Small cloves of Garlic
2 Green chillies (optional)
1 tsp Ginger powder
1/2 tsp Turmeric powder
1 tsp Red chilli powder or Crushed Black Pepper (adjust as per taste)
1/2 tsp Cumin powder
1 tsp Coriander powder
2 Bay leaves
2 cloves
2" Cinnamon sticks
Salt as required

For the topping:

I have used  Frozen puff pastry which I love to make now and then.  If you do not want to make it you can use ready made puff pastry or short crust pastry.

Method:

  1. Cut the Veggies Broccoli, carrots, cauliflower and onions.
  2. Take a wok, add 1 tbsp of coconut oil when it's warm add cloves, cinnamon, bay leaves, finely crushed Garlic-Green chillies with chopped onions and turmeric powder into the wok and saute them for few minutes till the onions become translucent, add 1/8th tsp of salt and sugar this helps onion sweat soon. Now add 3 tbsp of walnut butter add the chopped vegetables sprinkle some water close the lid and cook for 20 minutes saute now and then to check if the veggies don't get stuck to the wok, cook in a low to medium flame and sprinkle little water if necessary. cook them until they are well done.
  3. In a pressure cooker, using the vegetable stock cook hulled Hemp seeds,Lentils and Barley. for 3 whistles (pressure cooker usually takes around 15 minutes in a medium flame to cook completely - check my notes*)  until well done, allow it to cool.
  4. Once the veggies are done add all the spice powders coriander, cumin and ginger. Mix well leave it for a 5 more minutes in a low flame, after 5 minutes add coconut milk.
  5. Taste and check the spices and adjust, add the cooked hemp seeds, Lentils and Barley then add required amount of salt taste again and adjust the salt.
  6. Close the lid and allow it cook for 10 minutes in a low flame. sprinkle herb of your choice and finish the curry.
    Spoon the veggie curry into 4 or 5 ovenproof bowls or Ramekins or a big casserole, filling to the brim so the pastry don't fall in the middle, then top it with shortcrust pastry or a puff pastry and bake it at 180 degrees 20-25 minutes or until they become reddish brown in colour.

Notes:

*I use a Pressure cooker to cook lot of my dals, rice etc when the food is completely cooked the pressure cooker whistles when it's on the third whistle leave for 2 to 3 minutes and switch off the stove.  This ensures the steam is still in cooker and cooks completely.
Cut a strip of the pastry and seal it on top the bowl or whatever container you are using and then spread the pastry on top this helps in the pastry not sinking in the middle and cooks properly.
Check the curry to your taste increase or decrease the spices used as you prefer.

Roasted Pepper soup

Did you all enjoy eating Pancakes yesterday, I made a special pancake for my daughter will post it soon, photos are still in my camera, need to download and sort it out.  I thought of doing it today, but it’s been a long and tiring day.  I never thought I would be so busy, joining college has taken most of my time.  It’s been a long back I did any studying so, coming back to terms with it is a big deal for me.   Cooking has become an ordeal for me these days, just  for two has become a strenuous job.  I miss my kids so much who came home  always hungry, checking out what I have in store! Cooking and baking had a purpose and  fun then.

The Day before yesterday I was talking to my sister I was telling her it’s not been a good winter this year, I felt that the weather hasn’t been that cold.  Maybe I jinxed it, already past week it’s been horrible with stormy gale force howling winds creeping  through the chimney  walls was scary and horrible to listen to.  Couldn’t even walk on the road, it was raining and so windy I thought I might fly away.   When you are out the house you know how numb your hands and feet feel the comfort of a home onto my couch with a warm shawl around me is all that I long for. And of course, I love warm and comfort food and when you are too lethargic to cook steaming Soups are the best option with lovely crusty bread is all I wish for.

Roasted Pepper soup

 

I love peppers and usually have it in my pantry, I use it every possible way! I get these in abundance in summer and I grow them in my little garden, the fresh pepper from the plant is so delicious, I just love it.  My favourite is the green pepper I think I like it because of the spiciness it gives rather than the others.  All the other coloured peppers are mildly sweet to my liking.

Soups always remind me of my home, I wouldn’t have so much soup as I have it here, and Soup was something I used to have when I visited a restaurant with my North Indian meals.  After coming here, it has become a staple food for me with a crusty loaf.

Roasted Pepper soup

Serves: 4

Ingredients:
2 Large Red Peppers
1 small Green Pepper
1 small Yellow Pepper
1 Tomatoes
1 Onion
2 cloves garlic
1’’ Ginger
1 or 2 Bay leaf
3 to 4 cloves
½ tsp Black Pepper corns
½ tsp Cumin
2 tbsp of Crème Fraiche (optional)

Roasted Pepper Soup

Method:

On a stove top place a metallic frame and place all the veggies said above to roast turning them now and then which helps in charring them Or you can place these on a baking sheet and cut the peppers and place the cut side down in between place the garlic cloves and onion and tomatoes in a preheated oven gas mark 5 or 6 for 20 to 25 minutes until they are charred.
Remove them from the oven or from the stove top once they are cool remove the charred skin from the peppers and tomatoes, I don’t throw them away but keep it and use it in my curries.  Gives a smoky flavour to my dish.  Remove the skin from onions and garlic as well and keep aside.
In a skillet add a tsp of olive oil once it is warm enough add cloves, pepper corns, Bay leaves and cumin roast them to this add skinned bell peppers, onions, tomatoes and garlic and sauté for a one or two minutes.
In the mean time take 500ml of vegetable stock in a pot and allow it to boil with the bay leaves removed from the sautéed veggies above.
Once they are cool take the rest of the sautéed ingredients into a blender or mixie Blend them all into a smooth paste
Add this smooth blended paste into the vegetable stock mix well add Himalayan salt, taste and adjust.
You can also taste and add finely freshly crushed black pepper corns to suit your taste, and allow it to boil further 5 minutes.  Don’t boil for too long you will lose the colour.

If you find the soup is thin to your liking mix 1 or 2 tsp cornflour or arrowroot powder in 2 or 3 tbsp of water before adding it to the soup, this makes the soup to thicken up and looks creamier. You can top with crème fraiche and serve it steaming hot with a country bread.

Avocado Spring onion Grilled Cheese Sandwich

It’s already 2nd of December yeah! That’s right, days just fly off like I said yesterday.  I can’t write something like my mother used to bake bread or how I loved my sandwiches in my Lunch Box.  Very rarely I used to take bread sandwich, actually I can’t even rememberJ.  The only thing I can remember of Bread is 2 things one is Jam / sugar sandwiched bread toasts and just bread toasts with my milk / coffee when I used to fall sick.  The Milk breads which we used to get in Bangalore were really tasty.  Have you ever tried my Milk bread you should give it a go.

When my kids started going to school, I used to give them sandwiches sometimes, they always loved it with Butter and Jam (Toast with butter and Sandwich with Jam)!  As they used to take Indian food in their lunch Box which they loved.   But they were all bygone days, soon as they started refusing to take Indian food in their lunch box.  The most they were ready to take was Indian flat breads (Chapatis /parathas).  They said they wanted something to hold in their hand and eat as they had no proper place to sit and eat or they would say they had no time to have a relaxed lunch break, well as they grow up they start giving me  reasons as they want their way.  In the beginning, I was worried then started looking for healthy breads to make sandwiches and started exploring new ingredients to sandwich between them.  Not just that until they finished their schooling every week I used to bake my own bread at least twice, they loved home baked breads as well.

This filling has always been one of our favourite, Each and every time when I send this bread toast I get texts from my hubby and children after their lunch break that it was awesome.  A filling which hearty healthy and a wholesome either as your breakfast or for your lunch box.

Avocado and Spring Onion Grilled Cheese Sandwich

Avocado spring onion grilled sandwich

Ingredients:
2 Avocado
1 Bunch Spring Onion
1 medium sized red onion/ Bombay onions
1 Large Green Capsicum
1 or 2 Green chillies finely chopped (optional)
½ tbsp. of Chilli flakes
1 and ½ tsp salt (as required)
1 or 2 tbsp of Lemon Juice
Any herbs of your choice
(Coriander leaves, parsley, chives, Basil anything you like)

Avocado spring onion grilled sandwich

Method:
Remove the skin from the Avocadoes and chop them into pieces, wash spring onions and chop into fine pieces, the same goes to capsicum and onions chop it finely as well.  Chop green chilies if using or use chili flakes and required salt, squeeze a tbsp of lemon juice.

Mash them a little bit mix them all together, just they all combine well together to this add finely chopped herb of your choice (I used coriander leaves). Combine them all well together and keep it aside for few minutes.

Take Bread of your choice butter it put the filling and some cheese on it and grill the sandwich for a wonderful aromatic Grilled sandwich.

You can make it VEGAN by not using Cheese.

It's December first! Already! Wonder how the whole year has just gone by without me noticing it.  Even though it’s the end of the year it’s the season of celebration.  Christmas is around the corner you can see the festivity everywhere.  You can see lights up in Malls, shops, street makes you happy even the cold doesn’t seem to bother people here.  Everybody would be shopping till they drop out.

Strawberry diaquiri punch

Christmas means Red and Christmas means Celebration. Let’s raise a glass to the festivities and happy holidays and also festive for a new year’s eve.   I don’t do cocktails so why not mocktail then! Here’s a toast for happy Christmas.

Ingredients:
1 lb (445grm) Strawberries
2 Limes
2’’ Fresh Ginger
1 small stick of Cinnamon
1/3 cup Sugar*
6 Cups water**

 Method:

In a bowl take 2 cups of water to this add crushed Ginger, Cinnamon stick and  strawberries let it simmer for around 10 minutes.
In the mean time, slice the limes into 2 halves squeeze the juice out of them and keep aside.  Don’t throw away the skin cut them into two more halves each and dunk them in the strawberry syrup once the stove is switched off and close the lid, leave it to marinate for 10 more minutes,
Remove the Cinnamon stick and the skin of the limes.  Take the syrup and blend it in a blender add some water if required to a very smooth consistency.
Using a sieve filter it to this add lime juice from the two limes and the remaining water with crushed ice cubes and some mint leaves, adjust sugar  and serve it chilled or at room temperature.

*Sugar – Use sugar as required per your taste or any other sweetener, like Honey, maple syrup etc.
**Water – I have used plain water you can use sparkling water or soda water for a bubbly touch.

Making a dessert is time-consuming don't you think? but after it's made and  if you have a sweet tooth you are bowled out to both the virtual and real treat.  I am not a dessert person, I love pineapple pastry though, I go weak in my legs I have a special love for them and all milk based Indian sweets.  I don't like sweets which are too sweet and surprisingly this pannacotta is not too sweet, well of course you can make it sweet if you add more sugar but, panna cotta aren't too sweet but wickedly delicious.  Panna cotta is an Italian delicacy, panna cotta is an  Italian dessert made with thickened cream and moulded with gelatin, as I don't use gelatine I have subbed it with Agar Agar.  These days panna cotta can be made skinny, dairy free and whatever way you want to enjoy it!

It's that time of the year your palette changes from warm food and soups to something refreshing and cool, Fresh salads either with veggies or fruits or a combo of both and something thandi (cool) to drink.  Spring is slowly settling to Summer,  brings your senses to a galore of tastes tingling your taste buds craving for something fresh and juicy.

Strawberries and summer come hand in hand, you can see loads of strawberries in the market a punnet would cost you a pound, not all strawberries are sweet, talking to local people here I found out strawberries from Hertfordshire are very sweet, and when I find them in the market I never miss to buy them my daughter loves them, both us wander a lot she is a foodie friend to me.  Last time when we went to Gym we found these British strawberries I forgot from where it came, they weren't too sweet, we were a bit disappointed so we decided on munching some cherry tomatoes instead walking back home, Ahh.., I didn't  tell you did I? there is a little farmer's market we often go to whenever we go to Gym pick up some fresh fruits and veggies, Cherries are my favourite, I just can't stop eating with one  by the time we come back home I would finished the whole lot.

I first thought I will make some lemonade then decided otherwise as I had just made it a few days back.  I had put my grey cells to work, I remembered that I had to do a dessert this month for #cookingwithfriends theme and had already planned on making Mango pannacotta  which I changed to strawberry instead and made Mango milkshake (Seekarne).   As the strawberries weren't that sweet I thought of making  this with a combination and decided upon vanilla and some chia seeds  to go with it.

We never had strawberries as kids.  I can only think of Melons and Mangoes when summer set in, in our part of the world, we loved eating loads of watermelons and mangoes and sometimes eat Ice cream when there used to be a man who used to bring in his cart all these Lollipops and sometime Kulfi's,  mother never made them at home looking after three kids and her full-time job was enough for her to manage.  My parents never liked us buying Ice creams from him, and was a rare treat. I still remember my first Ice cream I made was when I was in year 11, for a first timer it was a great success and as eggs were a no-no at home I made it eggless as well.

Time changes so many things in life, never thought  I would be here eating strawberries instead of Mangoes!, how we change our food habits and adapt to what we get.  Mango milk shake to a pannacotta, that's what has changed when you are blogger best of all, with all the love in the world you prepare it.

STRAWBERRY-VANILLA CHIA SEED PANNA COTTA (GELATINE FREE / VEGETARIAN)

INGREDIENTS: 
For Strawberry pannacotta:
500 grms Strawberries
(2 Cups pureed strawberries)
1/4 cup very warm water
2 tbsp Agar Agar powder*
1/2 cup Brown sugar

For Vanilla Chia seed Pannacotta
2 Cups milk
1/2 cup double cream
1 tsp pure vanilla extract / slit and scrape vanilla pod
1 tbsp Chia seed
2 tbsp Agar Agar powder
1/4  cup very warm water
1/3 cup Suagr

METHOD:
Wash and cut Strawberries into a container puree them in a blender  with little water into a smooth puree, pour the pureed strawberries into a container and allow it to cook add 1/2 cup sugar and cook until all the sugar dissolved.

In a container add 2 cups of milk and sugar and boil it in a low flame for 10 minutes to this add chia seeds and cook for 5 minutes,  Meanwhile in a different bowl, boil water add tbsp of Agar powder until it completely dissolves, pour this mixture immediately into the milk mixture, add double cream, Vanilla extract or slit and scrape a vanilla pod  and blend them all together.  Leave it cool for 1/2 an hour, mix now and then, check its not thickening, as you don't want it solidifying, they just need to get cooled down now pour this into the serveware in which you want to serve, I slanted my glasses and put them in the fridge to set. May take 3 to 4 hours.

Once the vanilla panna cotta sets, you can start the strawberry panna cotta, you get two cups of pureed strawberries from 500 grms of strawberries into a container with sugar and cook them together until sugar is completely dissolved switch off the stove and keep aside, In an other bowl warm water and add Agar powder mix well with no lumps add this immediately into the pureed strawberry mixture blend well and leave it to cool, keep checking now and then that it doesn't set, you need it just to cool down, when its cooling down and ready to poured into the glasses to set bring your vanilla panna cotta glasses out of  the fridge.  Pour strawberry panna cotta into the gap until they both balance or the way you like to design it put them back into the fridge to set. May take 2 to 3 hrs
Once both of them are set you can serve them when needed.

NOTES:
Agar - Agar is a sea weed algae, it was discovered in Japan and it is called Kanten, It is called china grass in India, this is  vegetarian/vegan substitute for gelatin.  It even sets in room temperature and is better than gelatine even when temperature rises.  It does not have any taste, odour and smell.  You can find them in health food stores as powder, flakes, threads etc.  1 tbsp of agar powder dissolve it in a 4 tbsp hot water, 10 minutes it will start setting. For one cup of liquid to set use around 10 grms of Agar powder, I used 1 tbsp(8grms) as I wanted it to set it bit softer (wobbly), if  you want it set properly use 10 grms.
Increase or decrease sugar as per your taste.  My strawberries were a bit tart so had to use more sugar to balance it.
